Homemade caramel corn is the perfect snack to have around the house during the holiday season. It definitely satisfies that sweet craving and is not too filling. Caramel Corn Christmas Gift

I made this for our work Christmas party and it was a hit – the bowl was nearly empty after the 2 hour party. Don’t you love that? When you make something and people eat it right up? That is truly my favorite part about cooking and baking – sharing it with colleagues, friends and family. Nothing makes me happier when the bowl is empty or there’s only one cookie left on the plate – the holidays are about sharing and INDULGING.

Caramel Corn Recipe

Caramel corn is also a great Christmas present – you can make a ton of it and wrap it up all cute like – I found this Christmas tin bucket at Target for $1.00! $1.00 people! Recipe type: Snack
Serves: 8
Ingredients
  • 1 cup butter
  • 1½ cups packed light brown sugar
  • ½ cup dark brown sugar (if you don't have dark brown sugar, you can use light)
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • ½ cup light corn syrup
  • 1 teaspoon baking soda
  • 8 cups popped popcorn
Instructions
  1. Preheat oven to 200 degrees.
  2. In a large pot over medium heat combine butter, brown sugar, corn syrup, vanilla and salt and boil for 5 minutes. Remove from heat; stir in baking soda - stir well. Caramel will bubble up. Pour over the pop corn. Stir to coat well. Bake in large roaster or pan for 1 hour, stirring every 15 minutes. Spread on waxed or parchment paper to dry.
Notes
You can double this recipe. Make sure you use a large pot to make the caramel because it does bubble up quite a bit - mine spilled overt the edge and that is not a fun clean up.
