Sandwich anyone?
There is nothing quite better for lunch than a really good sandwich. Vin and I were craving a good Italian sandwich so we headed over to one of our favorite grocery stores, Caputo’s, to get all the fixin’s. Here are the musts.
Capicola, soppressata, mortadella WITH pistachio (you can get it without, but why would ya do that?), and of course prosciutto. Make sure the meats are thinly sliced - the thinner the better. These are also a wonderful appetizer – put on a tray with some cheese and olives and your friends and family will love you even more than they already do.
Speaking of cheese…
Another must have is fontinella cheese. It’s a semi-hard cheese with a delicate sweet flavor with a hint of sharpness. It complements the meats so well and is perfect to serve on a meat or vegetable platter or crumbled in a salad. It also melts well…grilled cheese, macaroni and cheese, pizza….it’s definitely a refrigerator staple.
Provolone is also a must have on this sandwich…it may be hard to see underneath all the amazginess. Drizzle a little olive oil and balsamic vinegar on some crusty Italian bread and you have one of the best sandwiches you will ever eat.
Don’t be afraid to pile it on…the more the better. Bon Appetit!
