No Bake Funfetti Cheesecake Parfaits

I had you at no bake, no I had you at Funfetti, no I had you at CHEESECAKE. I think you will like this recipe.

I had an entire Saturday devoted to baking and let me tell you, I took advantage of it. I made four recipes that day, four! Can’t wait to share them all with you.

Weekend baking is one of my favorite things to do. What are you favorite weekend things? I also enjoy massages, going on walks, eating whatever I want, catching up on Revenge (that show has me wrapped around its scandalous finger), the list goes on and on. I also like making No Bake Funfetti Cheesecake Parfaits. 🙂

No bake cheesecake might be the best thing ever. It’s easy and you don’t have to wait hours to eat it. Alls you gotta do is mix some delicious ingredients like cream cheese, vanilla, powdered sugar, Funfetti cake mix, and whipped cream together and you’re done. DONE. It’s thick, creamy, not to sweet, and tastes just like a good ol’ Funfetti treat.  Grab a spoon and ENJOY my friends.

I added a ton of sprinkles because I like them. I like them a lot. I crushed up some vanilla wafers to add some crunch – vanilla wafers are perfect for parfaits. Remember these Vanilla Bean Pudding Fruit Parfaits? 🙂

I keep thinking of a no bake oreo cheesecake parfait. I know right? That would be SO amazing. Well if you’re not feeling Funfetti – ish, go ahead and use some crushed oreos instead and invite me over. I will eat it with ya.

I think everyone likes Funfetti stuff. I know I will be still be eating cupcakes topped with sprinkles when I’m a granny, but come on now, kids would go nuts for these. Instead of cupcakes for a Birthday party, make these cutie pies. Heck, your kids could even help you make them – that would be fun right? Top anything with sprinkles and it looks good.

Or just make them on wine night with your friends. There’s no shame in that. Again, invite me!

No Bake Funfetti Cheesecake Parfaits

Serves: 3 parfaits
Ingredients
  • 8 ounces cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup powdered sugar
  • ½ cup Funfetti Cake Mix
  • 6 ounces lite cool whip
  • 2 tablespoons sprinkles (or more if you like)
  • Vanilla Wafers, crushed
Instructions
  1. n a stand-alone mixer fitted with a whisk attachment, whisk cream cheese and vanilla extract until smooth. Add powdered sugar and Funfetti cake mix and whisk until combined. With your mixer on low speed, gently mix in the cool whip. Stop to scrape sides of bowl and gently mix again. Fold in sprinkles. Assemble parfaits using the crushed vanilla wafers.
Notes
You want to eat this pretty soon after you make them or else the vanilla wafers will become soft. I would still eat if they do become soft because it's still so good, the texture of the cookies are just a little different. If the cheesecake is too thick, add a few tablespoons of milk to thin it out. You can make the cheesecake before, store in the fridge, and then assemble the parfaits the next day.
