The most gorgeous salad, ever!
I am so in love with this Detox Salad. I can’t take credit for the idea though…I was inspired by one of my local grocery stores that makes a similar salad in their deli department.
Why make it at home if I can get it at the store you ask? Well…it’s cheaper and I can control how long it lasts in my refrigerator. I find that deli salads are often soggy if they are not made super super fresh, like right before you purchase them. You agree?
I love this salad so much that I had to figure out how to make it at home so I can enjoy it whenever I want and in its freshest form.
I just can’t get over how pretty this one is. I love the colors, the textures, the flavors…I love everything about this detox salad!
Fresh crunchy kale, cabbage, carrot, celery, onion, scallions, grapes, cranberries, pepitas and feta all get mixed together with the most simple lemon honey balsamic vinaigrette.
It’s sweet, crunchy, tangy and really, really tasty. It’s one of those salads you actually want to go for seconds. I swear! It’s that good. You can easily make this a little heartier by adding steak or salmon to it.
I love having this in the refrigerator to munch on throughout the day. It’s satisfying and incredibly healthy. I send this with Vin to work and I have made it for my neighbors as part of our weekly salad swap.
One more thing to add…if you don’t have all the ingredients OR you want to switch it up, go right ahead. The Lemon Honey Balsamic dressing can go on anything…it’s very versatile. This type of salad is a great way to clean out your refrigerator – we all have produce that unfortunately gets left behind sometimes…add it to this recipe and smother it with the delicious vinaigrette. It will be JUST as good.

- 1 bunch of kale, stems removed
- 1 cup chopped red or green cabbage
- 1 cup shredded carrot
- 2 stalks of celery, diced
- 1/4 red onion, diced
- 1/4 cup diced scallions
- 1 1/2 cups red grapes
- 1/2 cup dried cranberries
- 1/2 cup pepitas
- 3/4 cup crumbled feta cheese
- Dressing
- 1/2 cup olive oil
- juice from half a lemon
- 1 tablespoon balsamic vinegar
- 1 heaping tablespoon honey
- good pinch of salt and pepper
- 1 cup crumbled feta
- Add all of the ingredients to a bowl and gently mix.
- When ready to serve, drizzle with dressing.
- To make dressing, add all ingredients to a bowl and whisk.
