That it’s 30 degrees in the Chi Town area right this very second! It’s the little things in life…
I was really hoping to share something much more amazing or life changing with you but that’s all I got on this 30 degree Friday. Yay for Friday though, right? Any fun weekend plans? I’m STILL thinking about that blackberry cobbler that I’m craving so pretty sure I’m going to hash that out this weekend. We shall see what I can come up with.
So we are talking BLTs today. Classic sandwich that somehow, someway, comes together and is very good with just 4 simple ingredients. Who woulda thunk.
I fancied these up a bit with hard boiled egg and mayonnaise. I probably wouldn’t eat a BLT unless it had mayo on it…it just needs it otherwise it’s a bit dry for my liking. Ya know what else would have been good? The avocado that I had sitting on my counter. Avocado and bacon go together reeeeeal nice.
A BLT is also very versatile. You can take these ingredients and wrap them up in a tortilla or you can chop them all up and make a salad. I’m kinda liking the salad idea. I think it’s the whole mixing it with mayonnaise thing that is getting me excited.
Thought I would share some pretty cute behind the scene photos with you. So welcome to my studio, aka kitchen floor where I keep gumball machines. You see, light, good light is necessary for good pictures so during these dreary winter months I have to get creative and this is where I set up shop. We will get into all the behind scenes stuff at another time. I just love how my Izzy Bear is staring at the BLT, ready to pounce. I am proud to tell you that she just sits and watches. She’s a good girl.
She’s my little sidekick, partner in crime. (sigh) <3

- 6 slices of bacon
- 1 large tomato
- green leaf lettuce
- 4 hard boiled eggs
- Crusty bread
- Cook or fry bacon until crispy. If you using the oven, preheat to 400 degrees and cook for 20 minutes. Place on paper towel.
- To boil eggs, place in a pan and fill with water. Bring water to a boil and then reduce to a simmer and simmer for 10 minutes. Immediately dump hot water and add cold water and ice to stop the eggs from cooking. Peal and slice.
- Prepare sandwich by spreading mayonnaise on both sides of bread, add lettuce, tomato, bacon and eggs. Cut and enjoy!
