We can’t ever forget how good a BLT is, okay? I often forget about this amazing sandwich and it deserves so much more than that because BLTs are so dang good! 

BLT Sandwich Recipe

So we are talking BLTs today. Classic sandwich that somehow, someway, comes together with just 4 simple ingredients. Who woulda thunk.

I fancy my BLTs up a little with egg salad and fresh avocado. I also slather some extra mayo on the bread because I’m a mayo kind of girl. I find that the egg salad and avocado give a soft and silky element to the sandwich, otherwise they can be a bit dry to eat. 

A BLT is also very versatile. You can take these ingredients and wrap them up in a tortilla or you can chop them all up and make a salad. I’m kinda liking the salad idea. I think it’s the whole mixing it with mayonnaise thing that is getting me excited.

I really have to make these more often because my girls love bacon and they actually will sit on their little butts and eat it so there we go, BLTs every week for this family!

Ingredients
  • 8 slices of thick cut bacon
  • 1 large tomato, sliced thinly
  • Lettuce
  • mayonnaise
  • 1 avocado
  • 4 hard boiled eggs
  • Crusty bread – feel free to toast it if you want.
  • Salt and pepper
  • Fresh lemon juice (optional – see instructions)
Instructions
  1. Cook or fry bacon until crispy. If you using the oven, preheat to 400 degrees and place bacon on a rimmed baking pan. Cook for 15-20 minutes or until crispy. Place on paper towel to drain excess fat.
  2. To boil eggs, bring a pot of water to a gentle boil, place eggs gently into the water and boil for 10 minutes. Drain off hot water and cover eggs with cold ice water to stop them from cooking. Peal and smash up in a bowl with a little salt, pepper and mayo – this is to your liking and seasoning preference.
  3. Next, simply mash up an avocado – add a pinch of salt and pepper to bring out the flavor. If you have lemon, a squeeze of lemon juice would be nice to brighten it up a bit.
  4. Now to assemble! Prepare sandwich by spreading mayonnaise on both sides of bread. Add the egg salad to one side and the avocado to the other – the egg and avocado act like a glue for the other ingredients. Finally add the bacon, tomato and lettuce. Cut and enjoy!
