This blueberry Almond Smoothie is only 4 ingredients (yes, 4!) and blends into a smooth, creamy and healthy morning treat.
So who is on a health kick? I know I am. Vin and I spent 5 days in Cabo San Lucas for one of my best friend’s weddings (Congrats again Ali and Taylor!) where we indulged in seafood, quesadillas and one too many beers. It was wonderful, but we knew when we got back home, it was time to buckle down and get into a healthy routine again.
Side note…if you haven’t been to Cabo San Lucas, put it on your future vacations list. It was absolutely beautiful and the locals were very nice and accommodating. I will share more about our trip in another post to give you a little taste of what it was like. Stay tuned!
Look how pretty frozen blueberries are. I think frozen blueberries are my favorite frozen fruit out there. First, fresh blueberries are typically pretty expensive and you don’t always get a good batch…ya know when they’re tart and not sweet and juicy? Frozen fruit is typically frozen when the fruit has reached its perfect ripeness so you don’t have to worry about them being under-ripe. Blueberries also give smoothies and other sweet treats a beautiful deep purple color – it’s my favorite fruit to bake with, hands down.
This smoothie comes together with just 4 ingredients – frozen blueberries, spinach, bananas and almond milk. It’s SO good. You don’t even taste the spinach – it’s strictly in there for vitamins, the frozen bananas make it smooth and thick, the blueberries give it that nice deep purple color and the almond milk brings it all together while adding a touch of almond flavor.
You could totally add other fruits or vitamin packed ingredients like chia seeds to this smoothie if you would like…I’m thinking pineapple would be another nice addition for flavor, but honestly? I’m loving the simplicity of this recipe.
