Caprese Salad Skewers

Caprese Salad Skewers are such a pretty appetizer to make. They are also incredible easy to make and they have a ton of delicious, fresh flavor!

We had a great Easter, hanging with family and eating yummy food all day. We started at Grandma’s having bagels with lachs (salmon), fruit, ham, blintz (baked crepes), cheese bread, and mimosas! Then we headed back home to make caprese skewers to bring to our Aunt’s and Uncle’s house. I figured something light and fresh would be a good appetizer given the amount of food we had already enjoyed that day and still had yet to eat. 😉

I stopped by one of the fresh markets here in Chicago, Pete’s Fresh Market, where I got all the ingredients – mozzarella, basil, and cherry tomatoes. The produce at Pete’s is seriously amazing. Everything is fresh and very neatly stacked – I was like a kid in a candy store.

The tomatoes were absolutely beautiful and incredibly flavorful on their own. I don’t even like eating tomatoes like this and I loved them. They would be great in a salad or in a pasta which I plan on making for tonight’s meal with my leftover ingredients, can’t wait!

Aren’t they cute? Just assemble all the ingredients on a medium-sized toothpick, drizzle some olive oil on top, sprinkle with salt and pepper, then finally drizzle some balsamic glaze on top. You could just drizzle balsamic vinegar on top but I love the sweetness when it’s reduced.

Put them on a platter and bring them to the party!

Now back to East food. We ended our night eating more ham, lasagna (my favorite), green beans, potatoes, sweet potatoes, and snacked on more appetizers such a spinach dip, calzones, and bruschetta. Let’s just say I am tired and full today but can’t complain because it was delicious! For dessert – small slice of key lime pie and coconut cake.  I always forget about key lime pie which I have no idea why because it’s darn good. I will be putting this on my recipes to make list and hopefully conquering it soon!

On the agenda tonight: run 10 miles, do a 1,000 crunches, and 500 push ups. 😉

Caprese Salad Skewers

Ingredients
  • Cherry tomatoes
  • Mozzarella balls
  • Fresh Basil
  • Olive Oil
  • 1 cup balsamic vinegar
  • salt and pepper
Instructions
  1. Assemble, tomatoes, basil (roll from one end to the other), and mozzarella balls on medium-sized toothpicks. Drizzle with olive oil and sprinkle with salt and pepper.
  2. To make balsamic glaze, add one cup of balsamic vinegar to a sauce pan over medium heat. Once it comes to a boil, set on simmer for about 10-15 minutes until it reduces to a syrup consistency. You can check by dipping a spoon in the balsamic and if it covers the back of it, it's done. As it cools, it will thicken a bit more then drizzle on top of caprese salad skewers.

    When I saw this I thought “I can make this a bit less messy and surprise people with the taste by injecting the tomato with the balsamic…” LOL – Can you imagine?

    I thought that you are not supposed to refrigerate tomatoes because that reduces their flavor.

      Yes this is true so it’s best to make them fresh and serve but if you have to refrigerate that’s okay too.

    Hello! I have my housewarming party this weekend and was curious if I could make these the night before and put in the fridge? I just don’t want anything to dry out or get soggy. Thank you!

      Yes, you can assemble them the night before, but I would add the balsamic before you serve.

    Fun to serve and fabulous bit size treat. Only change – I agree with Mike – cut the tomatoes in 1/2 – put on paper towel – let them drain and you can stand them up – they look great like that and the balsamic does stick if you refrigerator them for a bit before serving.

    I made these for a party yesterday, and they were a big hit! This was a quick and easy receipe and easy to assemble, but looked kind of fancy and pleasing to the eye. The only change I made was to buy a 16 oz. package of fresh mozzerrella and cut it into sized squares. I was having trouble finding smaller mozerella balls, and it was more economical than the ones that I did find. I had two pints of cherry tomatoes and ended up with some of the cheese left over. Thank you!

    Only change I would make is to cut the tomatoes in half. Made them for a party of 100 and received that feedback.

    I just wanted to say that Caprese anything is one of my favorites. I am making these for an appetizer party tonight. The only thing different is that I am not making the basalmic, but using a prepared basalmic reduction that I get at the grocery store. It is already cooked down. I can’t wait to taste the freshness of summer!

      I would assemble them before, cover with plastic wrap and place in the fridge. Wait to add the balsamic vinegar until you’re ready to serve them. If you’re bringing them to a party, put the balsamic vinegar in a small container and bring it with you and simply spoon it on before you serve. Enjoy!

    Hi Amy! I have not tried it so I can’t fully answer your question. I can assume that you can put everything but the spinach and shrimp in the crock pot and cook then add the shrimp and spinach in towards the end as shrimp cooks very very quickly. I don’t think it would be an 8 hour cook time either – may 2-3 hours on low. If you try it, let me know how it works out.
