Well, I finally made them, and now I’m wondering why I waited so long.

These are everything you love about a classic cheeseburger, but pressed between crispy flour tortillas until golden and melty. Messy? Yes. Greasy? A little. Absolutely worth it? 100%.

And honestly, these feel like a treat dinner in the best way—like grabbing a cheeseburger from your favorite spot, but made right at home.

My Experience Making These

The first time I made these cheeseburger quesadillas, I was surprised by how fun they were to make and how quickly they came together.

Cheeseburger Quesadillas with Special Sauce

These easy cheeseburger quesadillas are filled with seasoned ground beef, cheddar cheese, and pickles, then served with a creamy burger sauce. A fun 25-minute family dinner!

Ingredients

Quesadillas

  • 1 pound ground beef (90% lean)
  • 1 small white onion, diced
  • 1/4 cup diced pickles (dill or bread and butter)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce (optional, but recommended)
  • 1 1/2 cups shredded cheddar cheese
  • 1 tomato, diced
  • Shredded lettuce
  • 6–8 flour tortillas

Special Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 teaspoons yellow mustard
  • Pinch of sugar

Instructions

    1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and the diced onion. Let the beef cook undisturbed for 2–3 minutes to develop some browning, then break it up.
    2. Season with 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1 teaspoon Worcestershire sauce (optional, but recommended). Continue cooking for another 3–4 minutes, stirring occasionally, until the beef is fully cooked and the onion is soft.
    3. Drain any excess grease if needed. Stir in 1/4 cup diced pickles, mix well, and remove from heat.
    4. Heat a large skillet or griddle over medium heat and lightly coat with nonstick spray or a small amount of oil.
    5. Place one tortilla in the pan. Sprinkle about 2–3 tablespoons of shredded cheese evenly over the tortilla, add a layer of the beef mixture, then top with another small sprinkle of cheese. Place a second tortilla on top (or fold in half if preferred).
    6. Cook for 2–3 minutes per side, until golden brown and the cheese is melted. Adjust heat as needed to avoid burning.
    7. Repeat with remaining tortillas and filling to make 4–6 quesadillas.
    8. In a small bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons ketchup, 2 teaspoons mustard, and a pinch of sugar until smooth.
    9. Slice quesadillas and serve with shredded lettuce, diced tomato, and sauce on the side or drizzled on top.

Notes

Helpful Tips:

  • Drain excess grease so quesadillas crisp properly
  • Use cheese on both sides of the filling for better sealing
  • Cook over medium heat for best browning
  • Let rest 1 minute before slicing
  • Reheat in skillet—not microwave—for crisp texture
