Looking for an easy and delicious dinner? This Slow Cooker Chicken Chili is just that! All you have to do is dump all the ingredients into your slow cooker and let it go! I use a rotisserie chicken because I love the flavor and dinner is done when you get home! Or you can make this ahead of time and serve the next day or even freeze. It’s truly a wonderful family dinner!
So my mom made this recipe and it was so easy and delicious that I had to make it, and then we ate it, and then we made it again, and then I said to myself, I HAVE to share this recipe because we loved it that much. 🙂
It’s that time of year, right? FALL!!! Bring on all the soups…especially chili. I am totally in the season of life where dinner NEEDS to be efficient. I love to cook, but I don’t have the time or energy to spend several hours in my kitchen…this is where the slow cooker comes in to rescue me!
I made this twice. The first time I used chicken thighs which I cooked with all the ingredients and then shredded. The second time I decided to use a rotisserie chicken which I actually preferred. I cut all the meat off and saved it for the end of cooking. I then put the carcass (I know…kind of weird) in the slow cooker and let it cook with all the ingredients. It flavored the chili so much more. We absolutely loved it. I then added the chicken at the very end of cooking. I highly recommend doing it this way…it’s just easier and also cheaper!
My daughter loved it so much she asked to have it for lunch the next day. I love a recipe that feeds my whole family…adults, kids and babies! We added some cheddar cheese on top and cilantro. It was the perfect touch. For some crunch you could add some tortilla chip or simply use them to dip into the chili – my other daughter is definitely a dipper!
