Looking for an easy dinner that’s healthy and flavorful? These Chicken Fajitas are just that! The chicken is seasoned with a wonderful Mexican seasoning and cooked with poblano peppers, onions and bell peppers. My family enjoys this meal several times a month!
Why are chicken fajitas such a wonderful dinner recipe?
I often get asked for dinner recipe ideas and this one immediately comes to to mind for three reasons:
- Minimal ingredients – this is easy to shop for.
- It’s healthy – simple ingredients often create healthy recipes. Using just olive oil, spices and whole ingredients.
- Leftovers – we eat leftovers in our house so if you’re wanting lunch for the next day, this is your recipe!
Ingredient List:
- Chicken breasts: the Mexican spice blend is perfect with any type of chicken, but in this case, I use the breast as it’s easy to cube up.
- Green and Red Pepper: I love the color combo of both the green and red bell pepper. They’re also classic in fajita recipes.
- Yellow Onion: I purchase yellow onions in bulk so they’re in most of my recipes. They’re the most common onion to cook with. They have a mild yet potent flavor, hold up well in cooking and offer a bit of sweetness.
- Poblano pepper: These are a mild Chile pepper that offer flavor without a lot of spice. Perfect for Chicken Fajitas!
- Mexican Spice Blend: I use a spice blend of chili powder, cumin, paprika, garlic powder, oregano, salt, pepper and cayenne pepper. I often keep the cayenne out for my kids. This combo is perfect for all types of Mexican dishes. I love it in my Authentic Mexican Rice with Chicken Recipe.
How to make Chicken Fajitas
- dice up organic chicken breasts then season with a homemade taco seasoning. I don’t like the packaged stuff…it has too many additives. I buy many of my spices in bulk so I never run out. If you cook a lot, I suggest buying your spices in bulk!
- I simply cut up a poblano pepper, bell peppers and an onion then season with salt/pepper and olive oil. If you’re worried about the poblano pepper being spicy, it’s not at all. You can leave it out all together and use an extra bell pepper if you want.
- Now my friends, you can cook this two different ways. One way is to put everything on a sheet pan and bake for 20ish minutes. Or you can do it in a cast iron skillet…cooking the chicken first, then the veggies. Both ways are incredibly easy and minimal clean up!
- I serve these with shredded cheese, greek yogurt, guacamole and tortillas. You could also serve this over rice and it would be amazing.

Chicken Fajitas
Organic chicken is diced up and seasoned then cooked on the stove or oven along with sliced poblano peppers, bell peppers and onions.
Ingredients
- 1 1/2 pounds chicken breasts, cut into 1 inch chunks
- 1 poblano pepper, sliced
- 2 bell peppers sliced
- 1 large white onion, sliced
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon red chili flakes (optional for heat)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil for drizzling
- Tortillas
- shredded colby jack cheese
- sour cream or greek yogurt
- avocados or guacamole
- lime for garnish
Instructions
1. If you're cooking in the oven, pre-heat to 425 degrees. Add diced chicken to a bowl and dump taco seasoning on top and mix. Drizzle olive oil and stir. Place on a rimmed cookie sheet.
2. Add vegetables to another sheet pan and season with salt and pepper and drizzle with olive oil. stir.
3. Cook at 425 degrees for abotu 20-24 minutes, stirring half way through.
4. If you want to cook in a skillet, cook chicken on medium high heat for about 6-8 minutes until cooked through. Remove to a plate. Add veggies to the same skillet and cook until softened and slightly charred.
4. Serve with tortillas and your choice of toppings!
