I have several recipes for banana bread already on the blog.
Brown Butter Banana Bread with Walnuts
They’re all equally delicious for their own reasons. Banana bread is so versatile. It can be made with healthier ingredients and you can add chocolate chips, nuts, Nutella, etc. to switch up the flavor as well.
Our family sometimes watches our gluten intake as I find that if we have too much gluten, it can make us feel sluggish. I always keep some King Arthur Gluten Free Measure for Measure Flour in my cupboard so when I feel like making something, I can easily make it gluten free. There are so many wonderful gluten free flour options now and to make it super simple, I always purchase a cup for cup brand. Cup for cup means if a recipe calls for 1 cup of regular all purpose flour, you simply use 1 cup of the cup for cup gluten free flour.
This gluten free banana bread baked up beautifully. The flavor was spot on – simple, slightly sweet and the moisture was perfect! I don’t know about you, but dry banana bread is not that appetizing…the more moisture the better! This is a wonderful breakfast option or snack on the go. I decided to swap out the sugar for maple syrup and coconut sugar so it is a bit more natural and healthier than using regular granulated sugar. This is definitely a banana bread you can feel good about!
Enjoy!
Easy Gluten Free Banana Bread
Your faovrite banan bread, but gluten free! Limited ingredients and super simple to make leaving a moist, slightly sweet, perfectly baked banana bread!
Ingredients
- 1 1/2 cups gluten free flour (King Arthur GF measure for measure works well)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 medium sized ripe bananas, mashed
- 1/3 cup unsalted butter, melted
- 1 large egg
- 1/4 cup maple syrup
- 1/4 - 1/2 cup coconut sugar
Instructions
- Preheat oven to 350 degrees and prepare a standard 8x4 inch size loaf pan. You will need to grease the pan well. I like to press and piece of parchment paper to the bottom of the pan, letting it hang over the sides so I can easily pull the banana bread out.
- In a large bowl, mash the bananas with a fork. To the bananas, add melted butter, eggs, coconut sugar, maple syrup and vanilla. Whisk well!
- Lastly, add GF flour, cinnamon, baking soda and salt and whisk until combined.
- Pour into prepared pan and bake for 50-60 minutes. Time will depend on your oven. I alwasy check early to see how it's baking by inserting a knife into the center of the bread - it should come out clean. If the top of the bread starts to brown too much, gently tent foil over the top and continue baking until done. Let cool, remove and enjoy!
