Crispy, Chewy, and Soft Chocolate Chip Cookies

Serves: 24-28 cookies
  • 2¼ cups all purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • ½ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 1 egg plus 1 egg yolk
  • 2 teaspoons vanilla
  • 2 cups semi-sweet chocolate chips (or milk chocolate if you prefer)
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper or a non-stick baking mat.
  2. In a bowl mix flour, cornstarch, baking soda and salt; set aside.
  3. In a stand alone mixer fitted with a paddle attachment, cream together butter and sugars until light and fluffy, about 2 minutes. Add eggs and vanilla, mix until thoroughly combined, scraping down sides as necessary.
  4. Gradually add flour mixture and mix until well incorporated. Lastly add chocolate chips and mix.
  5. Drop heaping tablespoon of dough onto baking sheet and bake for 11 minutes. Let cool slightly and then transfer cookies to a cooling rack.
Crispy: bake 12-13 minutes, Crisp and Chewy: bake 11-12 minutes, Soft and Chewy: bake 11 minutes
