Ingredients
2 garlic cloves, minced
1 small white onion, diced
32 ounces (4-5 cups) vegetable broth
1 28 ounce can diced tomatoes
20 ounce bag pre-cooked cheese tortellini
3 handfuls fresh spinach (does not have to be exact)
½ teaspoon dried basil
½ teaspoon dried parsley
½ teaspoon dried oregano
1 tablespoon sugar
salt and pepper to taste
crushed red pepper flakes (optional if you like a little heat)
2 tablespoons olive oil
Parmesan cheese for garnish
Instructions
In a large pot, saute onions in olive oil for 2 minutes. Add garlic and saute for 1 minute. Add the rest of ingredient except spinach and tortellini. Bring to a boil and turn heat down to a rumbling simmer. Taste for seasoning - add more as needed. Add tortellini and cook according to package directions. 1 minute before tortellini is done, add spinach. Serve with parmesan cheese.
