Tortellini Soup

Serves: 4-6
  • 2 garlic cloves, minced
  • 1 small white onion, diced
  • 32 ounces (4-5 cups) vegetable broth
  • 1 28 ounce can diced tomatoes
  • 20 ounce bag pre-cooked cheese tortellini
  • 3 handfuls fresh spinach (does not have to be exact)
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano
  • 1 tablespoon sugar
  • salt and pepper to taste
  • crushed red pepper flakes (optional if you like a little heat)
  • 2 tablespoons olive oil
  • Parmesan cheese for garnish
  1. In a large pot, saute onions in olive oil for 2 minutes. Add garlic and saute for 1 minute. Add the rest of ingredient except spinach and tortellini. Bring to a boil and turn heat down to a rumbling simmer. Taste for seasoning - add more as needed. Add tortellini and cook according to package directions. 1 minute before tortellini is done, add spinach. Serve with parmesan cheese.
