Peanut Butter Banana Chocolate Chip Muffins with Walnuts

  • 2½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup brown sugar + more for topping
  • ¼ cup granulated sugar
  • ¼ cup canola oil
  • 2 eggs
  • ½ teaspoon vanilla extract
  • ½ cup milk
  • ½ cup peanut butter
  • 2 ripe bananas, mashed with a fork
  • 1 cup chopped walnuts
  • ¾ cup semi-sweet chocolate chips
  1. Preheat oven to 350 degrees and line a muffin pan with muffin liners.
  2. In a medium bowl mix together flour, baking powder, and salt; set aside.
  3. In a stand alone mixer fitted with a paddle attachment or with a hand held mixer, cream together the oil and sugars. Then add eggs and continue to mix scraping down the sides of the bowl as necessary. Finally add vanilla, milk, peanut butter, and bananas and mix until the wet ingredients are combined.
  4. Using a spatula, gently mix/fold in the flour mixture just until combined. Over mixing will cause the muffins to become tough.
  5. Lastly, gently fold in chopped walnuts and chocolate chips.
  6. Fill the cupcake liners ¾ full and sprinkle brown sugar on top. Bake for 20 minutes, turning the pan once after 10 minutes of baking. Let cool and enjoy.
