Ingredients
  • Cookies
  • 2 sticks unsalted butter, at room temperature
  • 1 cup confectioners’ sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 11/2 teaspoons almond extract
  • 2½ cups all-purpose flour
  • 1 teaspoon salt
Buttercream Frosting
  • ½ cup unsalted butter, room temperature
  • ½ cup shortening
  • 3¾ cups sifted powdered sugar
  • 3-4 tablespoons whole milk
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
Instructions
  1. Cookies
  2. In an electric mixer, cream butter. Add powdered sugar, blend in egg, almond extract, vanilla, salt and flour. You may need to scrape down the sides of the bowl to bring dough together.
  3. Chill dough until firm. If chilling in the freezer, no more than 10-15 minutes.
  4. Roll to ¼" thickness on a well-floured surface.
  5. Cut with cookie cutters and place on a cookie lined with parchment paper or a silicone baking mat.
  6. Bake at 375 degrees for 8-10 minutes. Cookies should not brown. Frost and decorate when cool.
  7. To make buttercream frosting, cream together butter and shortening. Add half of the powdered sugar and mix until smooth, scraping down sides of bowl. Add the other half with the milk, almost and vanilla and mix until smooth, scraping down sides of bowl.
  8. Frost cookies to your liking!
Notes
I decided to make my cookies thicker than ¼ inch. Depending on the size of your cut out will depend on how many cookies you can make. Should make anywhere from 20-30 cookies.
