Blueberry Crisp

Blueberries are covered with an oat streusel and baked in the oven until bubbly and crispy. Top with ice cream!

Ingredients
  • 6 cups frozen blueberries (fresh would work, too)
  • ¼ cup granulated sugar
  • ¾ teaspoon ground cinnamon
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon butter for greasing pan
  • 1 tablespoon cornstarch
Topping
  • 1½ sticks (3/4 cup) unsalted butter (if you use salted, omit the salt below)
  • 1 cup all-purpose flour (sub gluten free flour if making gluten free)
  • 1½ cup oats (sub gluten free oats if making gluten free)
  • ¾ cup granulated sugar or light brown sugar
  • 1 cup chopped walnuts or pecans
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 350 degrees. Grease a 9x13 or large cast iron skillet with butter.
  2. Add blueberries and vanilla to the pan and toss. Next add sugar, cinnamon and cornstarch and toss to coat.
  3. In a medium sauce pan melt the butter for the topping. Once melted, take off heat and add the rest of the topping ingredients and stir until combined. Pour topping over blueberries and bake for 40-45 minutes until bubbly and top is golden.
Notes
This can be made ahead of time. Bring to room temperature then cover and place in refrigerator. Crisp it back up in the oven at 350 degrees for 15-20 minutes.
