Healthy Oatmeal Raisin Breakfast Bars

Healthy breakfast bars made with limited ingredients and no refined sugar.

Serves: 9 large bars
  • 1½ cups old fashioned oats (any oat will do)
  • 1½ cups whole wheat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 2 bananas, mashed
  • ½ cup honey
  • 1 teaspoon pure vanilla extract
  • 1 cup raisins
  • ½ cup unsweetened shredded coconut
  1. Preheat oven to 350 degrees and line an 8x8 or 9x9 pan with parchment paper. To help the parchment paper stick, spray the pan with non-stick first; set aside.
  2. In a large bowl, mash the bananas then add the eggs, honey and vanilla. Stir until combined.
  3. Next, add the oats, flour, baking soda, salt and cinnamon. Mix until combined.
  4. Lastly, stir in the raisins and coconut.
  5. Pour into prepared pan and bake for 20 minutes. Enjoy warm or room temperature.
You can add nuts or other dried fruit. You can also make these gluten free by using gluten free oats and flour.
