Chicken and Bacon Brussels Sprouts Caesar Salad

Serves: 3-4
  • 1 bag shaved Brussels sprouts
  • 1 large chicken breast, cooked and cubed
  • 5 slices of bacon, cooked and diced
  • handful of shaved parmesan cheese
  • ½ cup - 1 cup Asiago Peppercorn Dressing or Creamy Caesar Dressing
  • Salt and pepper
  1. Season chicken breast with salt and pepper. Bake at 375 for 20 minutes or sauté in a pan with olive oil until cooked through, about 5-7 minutes per side. Cool and cube; set aside.
  2. Cook bacon in a fry pan or place on a rimmed cookie sheet and bake in a 400 degree oven for 20 minutes. Drain on a paper towel, cool and dice; set aside.
  3. Add all of the ingredients into a large bowl and toss with salad dressing. If you are making this ahead, wait to dress the salad before serving. Add more salt and pepper as desired.
Ingredient measurements can be flexible based on your liking - some like more dressing, some like less dressing, etc.
