Oatmeal Caramel Bars

A simple oat crust that is doused with a caramel sauce, topped with chocolate chips and m&ms then baked until gooey and delicious.

Serves: 12 bars
  • ¾ cup unsalted butter, room temperature
  • ¾ cup light brown sugar
  • 1 cup quick oatmeal
  • 1 teaspoon baking soda
  • 1 cup all purpose flour
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 32 caramels, unwrapped
  • 2 tablespoons butter
  • 2 tablespoon whipping cream
  • ½ cup chocolate chips
  • ½ cup m&ms
  1. Preheat oven to 350 degrees and line an 8x8 pan with aluminum foil and spray it with non-stick baking spray.
  2. Cream together butter and brown sugar until light and fluffy. Add the oatmeal, baking soda, flour, and salt and mix until just combined. Add vanilla and mix just a few more seconds.
  3. Take ¾ of the dough and press it into your prepared pan. Bake for 13 minutes.
  4. While crust is baking, melt caramels in a sauce pan with the butter and whipping cream over medium low heat, stirring often.
  5. Once crust is done baking (it will still be a little jiggly in the center), pour caramel evenly over the top. Sprinkle with chocolate chips and m&ms then crumble the rest of the dough on top. Bake for another 13 minutes. Let cool completely before removing from the pan and cutting.
You can double the recipe and bake in a 9x13 pan.
