Spinach, Tomato and Feta Egg Muffin Cups

Ingredients
  • 12 large eggs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 7-10 shakes of tabasco
  • 1 garlic clove, finely minced
  • 2 tablespoons minced shallot (can use an onion)
  • 12 sun-dried tomatoes, chopped finely
  • ¼ cup crumbled feta
  • ½ cup chopped spinach
Instructions
  1. Preheat oven to 350 degrees and spray a muffin pan well with non-stick spray.
  2. Whisk eggs, salt, pepper, tabasco, garlic and shallot in a large bowl. Make sure to whisk well.
  3. In a separate bowl, mix together sun-dried tomatoes, feta and spinach.
  4. Add a good tablespoon of the spinach mixture to each muffin cup then fill each muffin cup about half way with the egg mixture.
  5. Bake 20 minutes, let cool then remove from pan and enjoy!
Notes
last 4 days covered in refrigerator. Simply heat in microwave for 20 seconds before serving.
