Easter M&M Chocolate Chip Cookies

  • 3 cups all purpose flour
  • ¾ cup granulated white sugar
  • ¾ cup light brown sugar
  • 1 teaspoon salt
  • 11/2 teaspoons baking soda
  • 2 eggs
  • 2 sticks (1 cup) unsalted butter, room temperature
  • 11/2 tablespoons vanilla
  • 11/4 cup semi-sweet chocolate chips
  • Easter M&Ms for decorating
  1. Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper or a non-stick baking mat; set aside
  2. In a medium bowl, mix together flour, salt, and baking soda; set aside.
  3. Cream together butter, sugar, and brown sugar until light and fluffly. Add eggs one at a time and continue mixing until incorporated, then add vanilla and mix. Scrape down sides of bowl.
  4. Gradually add in the flour mixture until all incorporated. If you add it all at once, it will make a mess. Do not overmix.
  5. Next add in chocolate chips and stir by hand.
  6. Scoop out about 2-3 tablespoons of cookie dough (about the size of a golf ball), roll into a ball. Place on baking sheet and gently flatten. Add M&M's on top by gently pushing them into the dough.
  7. Bake for 12-14 minutes until just slightly brown on the edges. Cookies may not look done, but as they set they will come together.
