Serves: 8-10
  • 1 head of lettuce, chopped
  • 3 stalks celery, sliced in half then diced
  • 1 large red pepper, diced
  • 3 green onions, diced
  • 1 pkg. (10 oz.) frozen peas, thawed
  • 1 cup mayonnaise (I like Sir Kensington)
  • 1 tablespoon sugar
  • 1 cup shredded sharp cheddar cheese (shred yourself if you can. It's better)
  • 12 slices bacon, cooked and chopped
  • Pepper to garnish
  1. Prepare ingredients - slice, chop, etc.
  2. Place lettuce in a 9x12 dish, spread evenly.
  3. Top evenly with celery, red pepper, green onion then top with thawed peas.
  4. Mix mayonnaise with sugar and spread on top of peas.
  5. Finally top the mayo with shredded cheese then crumbled bacon. Cover and place in refrigerator for 2 hours before serving.
  6. To cook bacon, either cook in a pan on the stove or you can bake it at 400 degrees on a rimmed cookie sheet for about 15-12 minutes depending in thickness. Make sure to drain on paper towel before chopping.
