Two of my favorite things.
Avocados and goat cheese. Seriously love them both. I can also seriously eat both with a spoon. Seriously.
Hey! Happy Friday! It’s rainy here, but it’s Friday so I’m cool with it. Any fun weekend plans? I am heading back to Iowa to celebrate one of my best friend’s bridal showers – yaaaay! And if there’s enough time, my mom and I are going to make a strawberry rhubarb pie – only the best fruit pie there is. My parents grow rhubarb and she has loads of it so if time allows, we’re going to do it! Stay tuned…
So this guacamole! Things just don’t get any creamier. Avocados are great. Just great. You can eat them plain, mix them into a yummy dip, add them sandwiches, salads, burgers – so versatile.
Well I whipped them until they couldn’t be whipped anymore then added goat cheese, lime, and some seasonings. Then we ate the entire bowl with Donkey Chips and went to heaven.
This stuff is addicting and so different from regular guacamole. The texture is ridiculous creamy and the taste is slightly tangy and spicy (I added red pepper). 🙂 It’s also neon green! So cool.
The sky is the limit here for developing flavors – I added goat cheese but I can also see roasted red peppers OR sun-dried tomatoes in here. Can’t stop, won’t stop.

- 2 avocados
- 3 ounces goat cheese
- zest from 2 limes
- lemon juice from 2 limes
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon red pepper flakes (optional)
- ¼ teaspoon pepper
- Add avocados to a food processor and blend until smooth. Add rest of ingredients and blend until incorporated. Serve with chips.

Hi Terri – I don’t think it will be a problem, but I have not tried it before and I don’t have much experience with fondant. I do see fondant on cakes all the time so I don’t see how this frosting would be any different. Sounds like your cake is going to very neat!
