I’m on a Mediterranean food kick and I’m not mad about it. I often make chicken schwarma – such a great dish! However, I wanted to switch things up a bit. Add more flavor, color and textures. I’m a huge fan of sun-dried tomatoes and I loved the idea of pairing them with mediterranean flavors.
This dish couldn’t be any easier. Everything is roasted in the oven. Simply marinate, put on a rimmed baking sheet and let everything cook!
I love every part of this dish…the lemon chicken, the Greek roasted potatoes, the sweet roasted red onion & sun-dried tomatoes and finally…the warm feta cheese. Have you ever had warm feta cheese? Like the GOOD stuff, from Greece? It’s mind-blowing. When it’s warmed up, it milds the flavor a bit and it melts in your mouth. It’s just super delicious. Adding fresh dill and greens just enhances all the flavors and gives them a little bed to lay on!

Mediterranean Chicken Bowls with Potatoes, Sun-Dried Tomatoes & Feta
Meditteranean marinated chicken thighs are tucked onto a bed of lettuce with greek roasted potatoes, sun-dried tomatoes, red onion and feta cheese. Top with tatziki and enjoy this healthy beautiful dinner!
Ingredients
- 2.5 lbs boneless skinless chicken thighs
- 1/2 cup olive oil
- 5 cloves of garlic, minced
- juice from 3 large lemons
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 7 ounce jar sun-dried tomatoes, drained
- chunks of good feta cheese (I used feta from goats milk)
- 1 large red onion, sliced
- container of greens
- Tzatziki (to make it easy, I use Cedar's brand)
Instructions
- First, marinate the chicken for several hours. The longer it marinates the more flavor it will have. I suggest at least 4 hours. Simply combine the olive oil, garlic, lemon juice, salt, pepper, smoked paprika and oregano in a bowl and whisk to combine. Place chicken in a large bag or container and pour marinade all over. Refrigerate.
- When you're ready to cook, preheat oven to 400 degrees.
- Place chicken smooth side down (so top down) on a rimmed baking sheet along with the sliced red onion. Cook for 15 minutes then flip and cook for an additional 10 minutes. Turn oven to high broil and broil for 5 minutes, remove from oven, add sun-dried tomatoes and feta chunks and broil an additional 3-5 minutes until top of chicken is browned nicely.
- Remove from oven, let cool slightly. Place chicken, some of the sun-dried tomatoes, red onion, feta chunks and potatoes on a bed of lettuce. Serve with tzatziki and enjoy!
