Say hello to one of the most indulgent side dishes ever…Potatoes Au Gratin. Also known as scalloped potatoes. This recipe is full of indulgent ingredients and results in a delicious holiday side dish that everyone will truly enjoy!
It was Thanksgiving and my sister found an Ina Gartern recipe for Potatoes Au Gratin. This is when my love for this dish started. Now…I’ve had scalloped potatoes before. Delicious. BUT I had never made them myself. Until now.
I’ve made roasted potatoes, mashed potatoes, fries, etc. but scalloped potatoes are a whole different thing.
And I will continue making this delicious potato side dish until the end of time. At first I made the recipe just like Ina did and it was delicious but I decided to change it slightly as I felt it needed some freshness and a slightly milder cheese. I decided to use Havarti cheese (Ugh my favorite) instead of gruyere and added some fresh thyme. The result was perfect…just what my taste buds wanted!
This is not a difficult recipe but results in a fancier side dish. You do have to do some cooking, but it’s simply browning some onions and slicing up some potatoes. Then you simply mix all the delicious ingredients and let them bake together to form this creamy, indulgent, sinful, miraculous, amazing, delicious side dish.

You can make this a day before which makes holiday cooking so much easier. It’s also wonderful as leftovers. We did not let any of those potatoes go to waste, trust me!

Thinly sliced potatoes are covered with cream cheese, sweet onions and herbs and baked until bubbly. Preheat oven and butter a 9x13 baking dish; set aside Add olive oil to your skillet and place over medium heat. Add thinly sliced onion and cook for about 10 minutes until caramelized, stirring often. While onions are cooking, slice up potatoes 1/4 inch thick - use a sharp knife or mandolin. Add to a large bowl with 2 cups cheese, heavy cream, salt, pepper, thyme and onions once done. Stir so everything is combined. Dump potaotes into prepared pan and top with remaining 1/2 cup cheese. Bake for 1 hour - check for doneness. If not quite tender enough, put back in oven for 15 more minutes. Top should be browned and bubbly. Cool slightly then serve! You can bake this ahead of time, let cool then cover and put in refrigerator. Simply heat up in the oven at 300 degrees until warm, about 30-40 minutes. Potatoes Au Gratin (Scalloped Potatoes)
