Red Velvet Cookies

Seriously…I mean seriously. You have to make these. I’ve been eating one of these every night for the past 5 days and I don’t even care because I love them so much. Cream cheese frosting is sandwiched between two chewy red velvet cookie. I mean come on.

Because Valentine’s Day is coming I made something red velvet. I tried to make a cake…like 400 times and I didn’t like any of them so I brought you a sandwich cookie instead. Hey it’s all about quality right? And these are so quality.

This is a semi-homemade recipe I got from a cookie exchange I went to. These cookies were easily the most memorable to me. I had to make them and I had to share them with you! 

They are incredibly easy to make and are perfect for the upcoming Valentine’s Day holiday.

My very favorite part of this cookie is how chewy it is. That’s all I want in a cookie is a chewy texture and these hit the spot. Of course the cream cheese frosting is the perfect complement to the cookies. Can’t have red velvet without cream cheese frosting!

Really though…these became one of those recipes I couldn’t stop eating. I usually try to give baked goods away but these hung out at home with ME. 

red velvet sandwich cookiesThey cuddled with me on the couch while Vin and I would watch our shows – we were watching the Aaron Hernandez documentary series – He was an incredibly talented football player that was convicted of murder. I know…it’s awful but you learn a lot about NFL, his life and perhaps why he was who he was.  It’s an incredibly sad story but it was intriguing. I recommend it if you’re in the middle of trying to find a show to watch. It’s only 3 episodes. 

Now back to red velvet things..

These should be kept cold because of the cream cheese and I actually preferred them cold – they were awesome! Soft, chewy and sweet. The perfect bed time treat!

Yield: 18 cookies

Red Velvet Cookies

Red Velvet Cookies

Cream cheese frosting is sandwiched between to semi homemade chewy red velvet cookies making a delicious cookie treat!

Prep Time 5 minutes
Cook Time 12 minutes
Total Time 17 minutes

Ingredients

  • COOKIES
  • 1 box red velvet cake mix
  • 1/2 cup unsalted butter, room temperature (leave out overnight)
  • 1 tablespoon all purpose flour
  • 1/2 teaspoon pure vanilla extract
  • 2 large eggs
  • CREAM CHEESE FROSTING
  • 8 ounces cream cheese frosting
  • 1/4 cup unsalted butter, room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 1/4 cups confectioners sugar, sifted

Instructions

  1. Using a mixer, add all ingredients into a bowl and mix until dough forms. It will be sticky.
  2. Measure only 1 tablespoon of dough (a cookie dough scooper works best for this) and bake for 10-12 minutes. They should start to crack a little and then they are done. Do not over bake! Let cool.
  3. To make the frosting, cream together cream cheese and butter until smooth. Add confectioners sugar, vanilla and salt and mix until creamy.
  4. Frost the bottom of one cookie and top it with another cookie. Store in refrigerator.

Notes

These are best cold.
