I got this semi-homemade red velvet cookie recipe from a cookie exchange I went to. They were easily the most memorable cookie there, so I asked for the recipe and had to share them with you!

- They’re so delicious – I mean this when I say it. They’re just wonderful. The texture of the cookie is on point – slightly crisp on the edges and chewy in the center. The cookies are sweet with a hint of cocoa and a subtle tang. They pair beautifully with the rich, velvety cream cheese frosting.
- The recipe is super kid friendly – it’s straight forward and doesn’t require a ton of ingredients. My kids love making these!

Red Velvet Cookie Ingredients:
- 1 box Red Velvet Cake Mix: Any cake mix will do! This is such a convenient way to make a cookie as the cocoa powder, sugar, flour, and leveling ingredients are already in the cake mix.
- Unsalted butter: Butter adds a little flavor and helps create a cookie instead of a cake.
- All purpose flour: A touch of flour is needed for structure.
- Pure vanilla extract: Some vanilla enhances flavor.
- 2 Eggs: A few eggs help bind all the ingredients together.
Cream Cheese Frosting Ingredients:
- Cream cheese: Cream cheese has the perfect tang while also helping create a velvety smooth frosting.
- Unsalted butter: Butter is for flavor and helps create a smooth frosting.
- Pure vanilla extract: A little vanilla adds warmth.
- Confectioners sugar (powdered sugar): Confectioners sugar is what sweetens cream cheese frosting.
- Salt: I like to add a touch of salt to balance the sweetness.

Instructions:
This recipe really could not be more simple!
- Add all of the cookie ingredients into a bowl and mix until the dough forms. You can use a stand-alone mixer or a hand-held mixer. The dough will be sticky.
- Measure 1 tablespoon of dough using a cookie dough scoop and plop on a cookie sheet. Bake for 10-12 minutes in a preheated 350 degree oven. They should start to crack a little but should not brown at all! Underbaking is better than over baking. Cool cookies completely before frosting.
- While the cookies are baking, make the cream cheese frosting. In a mixer, cream together the cream cheese, butter and vanilla until smooth. Slowly add in the powdered sugar and mix until well combined.
- Frost one cooled cookie with cream cheese frosting then gently place the other cookie on top. Refrigerate and enjoy!
My very favorite part of this cookie is how chewy it is. That’s all I want in a cookie is a chewy texture and these hit the spot. Of course the cream cheese frosting is the perfect addition to the flavor of red velvet. Can’t have red velvet without cream cheese frosting!
Really though…these became one of those recipes I couldn’t stop eating. I usually try to give baked goods away but these hung out at home with ME.

- Do not over-mix the red velvet cookie dough. Mix just until combined.
- Make sure the cream cheese, butter and eggs are room temperature. They will mix much easier if they’re room temperature.
- Do not over bake the cookies. When in doubt, under bake if you’re not sure!
- Sift the confectioners sugar if you can – it will reduce any lumps and create a very smooth texture.

Red Velvet Cookies with Cream Cheese Frosting

Cream cheese frosting is sandwiched between two semi homemade chewy red velvet cookies making a delicious cookie treat!
Ingredients
Cookies
- 1 box red velvet cake mix
- 1/2 cup unsalted butter, room temperature
- 1 tablespoon all purpose flour
- 1/2 teaspoon pure vanilla extract
- 2 large eggs, room temperature
Cream Cheese Frosting
- 8 ounces cream cheese, room temperature
- 1/4 cup unsalted butter, room temperature
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 1/4 cups confectioners sugar, sifted (measure first then sift)
Instructions
- Using a mixer, add all ingredients into a bowl and mix until dough forms. It will be sticky.
- Measure only 1 tablespoon of dough (a cookie dough scooper works best for this) and bake for 10-12 minutes. They should start to crack a little and then they are done. Check at 10 minutes. Do not over bake! Let cool.
- To make the frosting, cream together cream cheese, butter and vanilla until smooth. Slowly add confectioners sugar and salt and mix until creamy, scraping down sides of the bowl as necessary.
- Frost the bottom of one cookie and top it with another cookie. Store in refrigerator!
Notes
These are best cold! Cookies will last up to 4 days in the refrigerator.
