I have fallen in love with Mediterranean flavors. These Roasted Greek Potatoes are now a family favorite. Yellow Yukon Potatoes are covered with spices, garlic and lemon then roasted until browned and slightly crispy. I then top them with fresh dill (game changer) and serve with tzatziki for dipping! You can also enjoy them as is with a side of protein and a salad!
I am nowhere Greek or Mediterranean (mostly Dutch here!), but I do have some very close friends (shout out to Julia over at A Cedar Spoon!) and a brother-in-law who are, and I have fallen madly in love with the Greek/Mediterranean style of cooking. The past year, I have dabbled into these types of flavors and I am enjoying every minute of it. Loving lemon and dill…also dried oregano has become my best friend. Other spices like paprika and cumin are always in my pantry as well. And of course…tzatziki. You can make tzatziki from scratch very easily, but it can also be bought (hello! mom of 3 here!). I enjoy the Cedar’s brand very much when I don’t feel like going all in with a recipe.
These Greek Potatoes are a wonderful addition to any meal. I serve them with grilled or roasted chicken thighs, a filet or another cut of beef. They would be amazing alongside a lamb burger or lamb/pork meatballs. You could even serve these as an appetizer. Everyone loves them – they’re always gone every time a make them…even the kiddos enjoy them.
I think providing a dipping sauce like tzatziki makes these even more special…more fancy…even more delicious. You could also serve these with a mayo based sauce…thinking mayo, garlic and lots of lemon juice. Now that would be very good, too!
I hope you enjoy these beauties as much as we do!
Roasted Greek Potatoes
Yellow potatoes are covered with olive oil, lemon, garlic, salt, pepper and oregano and roasted until golden brown then topped with fresh dill and served with tzatziki sauce.
Ingredients
- 5-6 large yellow Yukon potatoes, cut into even wedges
- 1/3 cup olive oil
- 3 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon dried oregano
- juice from 1 large lemon
- fresh dill
- tzatziki (I use Cedar's brand)
Instructions
- Preheat oven to 425 degrees.
- Place potatoes onto a rimmed baking sheet. Add the olive oil, garlic, spices and lemon juice and toss to coat.
- Place in oven and roast for 10 minutes, remove from oven and turn each potato over and roast for an additional 10 minutes.
- Last step is crucial for a nice golden potato. Turn oven to broil and broil potatoes for 5 minutes on EACH SIDE. Remove from oven, place in a bowl and garnish with fresh dill and serve with tzatziki for dipping if you would like!
