Potato Salad is a staple recipe that comes in in handy for all types of events. It’s often used as as side for barbecues or menus based on more Southern flavors. I actually love potato salad and found a recipe that inspired me to make a very simple one! This potato salad recipe has only a few ingredients like mayo, hard boiled eggs and sweet relish to keep things simple yet tasty!
There are several ways to make potato salad…or flavor it! The base is easy…red potatoes and mayo but after that the ideas are endless. You can add bacon and cheese, dill and red onion, and in this case hard boiled eggs and sweet relish!
I prefer a lighter take on potato salad since it’s often served with a heavier meal so this recipe is perfect for me! I love the sweetness from the relish.
The key to making potato salad is to make sure the potatoes are cooked right. I used red potatoes and made sure to dice them evenly so they cooked evenly. After that it’s simply waiting for them to cool before adding the ingredients that you love!
Red potatoes, sweet relish, hard boiled eggs, salt, pepper and then I added some parsley and a dash of paprika for fun.

A simple potato salad recipe comprised of red potaotes, mayo, sweet relish and hard boiled eggs. 1.) Add diced potatoes to a large pot, add 2 teaspoons of salt and enough water to cover the potatoes. Bring to a boil and cook for 20-30 minutes until tender. Mine took about 25. Drain and let cool. 2.) While potatoes are cooking, cook some hard boiled eggs. I bring my eggs to room tempeature (you can place them in a bowl of warm water to bring them to room temp) before adding them to boiling water for 10 minutes. Place in an ice bath to cool down before peeling and dicing. 3.) Once potatoes are cooled and eggs are diced, simply add the rest of the ingredients and gently stir. Taste for salt and pepper and add more to your liking. Add a few dashes of paprika to the top for color. Simple Potato Salad made with Sweet Relish
