This is the easiest fanciest dinner you will ever make.

Slow Cooker Short Rib Pasta | www.stuckonsweet.comI am dying over this dinner you guys! It’s so incredible and I can’t wait for you to make it because I really think you will fall deeply, deeply in love. This is a recipe for Slow Cooker Short Rib Pasta. Um YES!

You know me, I love PASTA. It’s definitely going to be my last meal on Earth. I like to make pasta once a week for dinner not only because I love it, but because I find it to be super easy! This specific recipe is amazingly easy and tastes SO fancy.

I love it when that happens!

Slow Cooker Short Rib Pasta | www.stuckonsweet.comThe good ol’ slow cooker does all the work for you. Now, you do have to sear the short ribs but it only takes minutes. Searing is important when cooking meat like a short rib because it adds more flavor and holds the juices in. But other than that, the slow cooker does most of the leg work.

Slow Cooker Short Rib Pasta | www.stuckonsweet.comShort Ribs are so flavorful and decadent. They literally melt in your mouth. They’re earthy, comforting and delicious. This recipe turned out so amazing that I made it twice in one week…to make sure it was perfect, but because we LOVED it that much. My 18 month old daughter ate this up like no tomorrow. It was delicious the next day, too – I simply heated it up in the microwave and it was just as fresh when I served it out of the slow cooker.

So, SO happy with this recipe!

Slow Cooker Short Rib Pasta | www.stuckonsweet.comI do want to talk about pasta real quick. I use all types of pasta in my cooking, but I have to say, I love the Rana brand. The pasta cooks up in 1 minute and it’s absolutely delicious. We love the homemade texture and the variety – the spinach and ricotta ravioli are one of my favorites, among many.

It’s also affordable and freezes well. They were on sale a few weeks ago so I bought six packages and put them in my freezer – you simply add it frozen to the water and it cooks up so nicely. Check it out, you won’t be disappointed!

Serves: 4
Ingredients
  • 4 short ribs, fat trimmed off
  • 3 tablespoons olive oil
  • 1 tablespoon minced garlic (about 3 garlic cloves)
  • 32 ounce crushed tomatoes (I use Escalon 6 in 1 Ground Tomatoes)
  • 1½ teaspoons salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 2 teaspoon sugar
  • 8 ounces pasta (I used Rana Tagliatelle)
Instructions
  1. Trim fat off of short ribs.
  2. Add olive oil to a large pot and place over medium-high heat. Once pan is hot, sear short ribs on both sides until nicely browned. Once browned, turn heat to low and add garlic. Stir for about 1 minute until softened.
  3. While short ribs are browning add crushed tomatoes, salt, pepper, sugar and basil to your slow cooker and stir. Add seared short ribs and garlic to the tomatoes and cook on low for 6-8 hours (mine cooked for 7). Short ribs should be falling apart or literally falling off the bone when done. Remove short ribs and shred into chunks, removing any fat. Because short ribs have quite a bit of marbling (fat running through the meat), the sauce will be oily. Use a spoon to spoon off the fat from the top of the sauce as best you can. You don't have to do this, but I preferred a less oily sauce. Add meat back into the sauce and stir. Cook pasta according to package directions (I love Rana pasta because it cooks in 1 minute! And it's delicious). Add pasta to the sauce and garnish will parmesan cheese.

    So yummy! I am not an expert chef by any means and this recipe was so easy and delicious. I didn’t make any changes to it and we loved it. We had leftovers the next day and they were even better!

    Just made this. Omg so good. I changed a few things. Didn’t have crushed tomatoes so uused diced tomatoes and added crimini mushrooms.

      I don’t, sorry. You can google a calorie counter and plug in the ingredients.

    Handful of ingredients and slow cooker does the job for you? There is no excuse not to make this pasta!!! My family love short ribs and I think my husband would really like this:) Thanks for sharing Jessica
