Cinco De Mayo…seriously how is May 5th already?
Any plans? I have no plans. I’m not even making anything Mexican inspired. I know…so boring over here. I simply just didn’t plan ahead, but I did make this fruit salsa last week to share with you and it’s good. Like really good.
Maybe I will drink
one three margaritas or something – there are so many good recipes out there right now! What’s your favorite margarita flava? I am a strawberry or mango type of margarita girl and I don’t like salt with my margarita. Yuck. I like ’em sweet, so surprising…
I thought about making a regular salsa, but I wanted to shake things up and do something a little different. And you know how much I’m loving strawberries right now. Yep…still eating bunches of them every week. So I grabbed my favorite berries and threw them in a bowl with lime zest, lime juice, avocado, cilantro and a dash of salt and pepper. I seriously love lime and lemon zest – talk about flava. And after you zest fruit, your hand smells fresh all day. So awesome.
You know what else it awesome? THIS SALSA. Don’t get me wrong, I’ve had a ton of fruit salsa (mango and peach. Ugh! so good!), but this one was new for me. It was tangy and sweet and oh my gosh easy. I made an entire bowl and between the Vin Man and myself, we devoured it. We ate it with pita chips and also on top of fish. It was delightful.
And so pretty!

- 1 container blueberries
- 1 container blackberries, sliced in half
- 8 -10 strawberries, sliced into small pieces
- 1 avocado, sliced into chunks
- ½ red onion, finely diced
- handful of cilantro, minced
- zest of 1 lemon
- juice from 1-2 lemons (based on your taste preference)
- dash of salt and pepper
- Gently mix all ingredients in a bowl and serve with chips of choice.
