Whole Wheat Buttered Noodles with Kale and Parmesan Cheese

Here’s a very quick recipe for ya.

Vin was at the Bear’s game last night so I was thinking about what to make myself for dinner. Usually it’s eggs and toast or something simple like that. Keeping with simple, I decided to make myself something a little more elegant with very limited ingredients.

It seems as though people are always looking for simple dinner recipes that they can make for one or two people. I am always looking for those, too. It may seem as though we eat a big fancy meal every night but we really don’t. We can’t. We would be overweight and I just don’t have the time. And sometimes I just want something that is not only simple to make, but tastes simple.

Whole wheat buttered noodles (could just eat these!) with kale and parmesan cheese is one of those meals.

It’s so insanely easy and tasty, too! I love that I can taste the kale, the pasta, and the saltiness of the cheese. Oh, and the creaminess of the butter. This meal, although it has some butter in it, is packed full of nutrients from the kale and the whole wheat pasta.  A simple recipe with vitamins and nutrients, too? Winning.

I am also a pasta freak and my other half isn’t. So when he’s not around, I like to indulge in one of my favorite meals even if it’s not cheesy and garlicky.

You could sauté up some garlic and add it to this dish, too.  Just saying…

You could also use spinach instead of kale or mozzarella instead of parm. It’s incredibly versatile. That’s the lovely thing about pasta – add whatever you want to it.

Now that I am thinking about it. Adding a splash of heavy cream would have been nice, too.

But this is simple and healthy so…let’s keep it that way for now.

Whole Wheat Buttered Noodles with Kale and Parmesan Cheese

Ingredients
  • 2 cups whole wheat pasta (I used shells)
  • 2 handfuls of fresh kale, chopped
  • 4 tablespoons butter
  • pinch of pepper
  • grated parmesan cheese
Instructions
  1. Preheat oven to 425 degrees. Place kale on a baking sheet and roast for 8 minutes or until crispy.
  2. Prepare pasta according to package directions. Drain and add back into the pot you used to boil it in. Add the butter and mix until melted. Gently mix in pepper and kale. Top generously with parmesan cheese.
