Homemade Chocolate Pudding may be my favorite dessert ever.

I recently bought chocolate covered raisins, trail mix with dark chocolate chips in it, chocolate ice cream, and Oreos from the store. I don’t know what got into me. I just wanted chocolate everything, including this recipe for homemade chocolate pudding.

I made it a few weeks ago with cocoa powder and I didn’t like it. It was too bitter so I decided to use semi-sweet chocolate instead.

And it worked out b.e.a.uuuutifully. Not too sweet but sweet enough ya know? This blog isn’t called Stuck On SWEET for nothing. Bring on the sweetness! I love me some dark chocolate though. Are you a fan of dark chocolate or are you milk chocolate person?

Ya know. Pudding is actually pretty easy to make once you get a handle on it. I truly believe you have to screw it up a few times before you get it right. I’ve screwed up multiple times before so if it doesn’t work for you the first couple of times, don’t worry, there’s hope!

Timing and heat level are the two keys to making a great pudding recipe. Pudding is not something you can walk away from and let it do its thing. However, it only takes about 10 minutes to make so it’s not a time sucker.

Lately I’ve been watching YouTube videos on how to cook or bake certain things, like lobster for example. A few weeks ago I made lobster macaroni and cheese. I know!! It’s.the.best.thing.ever. Anyway, I’m not cooking lobster on a weekly basis or anything so I wanted to make sure that I was well aware of how to make it. So I checked out some videos, gained some confidence, learned a few things, and it turned out amazing.

Homemade Chocolate Pudding

Homemade Chocolate Pudding with Fresh Whipped Cream is a simple yet delicious dessert you can make at home. Just a few ingredients bring this ultra creamy chocolate pudding together. It's creamy, light yet indulgent!

Ingredients

Chocolate Pudding

  • 3 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 ounces high quality semi sweet chocolate, chopped
  • 3 large egg yolks
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons cornstarch
  • 2 tablespoons unsalted butter

Whipped Cream

  • 1 cup heavy whipping cream
  • 1 tablespoon confectioners sugar
  • 1 teaspoon pure vanilla extract

Instructions

    1. Add 2 1/2 cups milk, chopped chocolate, granulated sugar, and salt to a medium sauce pan and place over medium heat. Bring to a simmer and whisk. Take off heat.
    2. Next, add egg yolks, vanilla, 1/2 cup of whole milk, and cornstarch to a medium bowl and whisk well.
    3. Next, While whisking the egg mixture, slowly add the hot milk mixture to the bowl. You want to slowly add the hot milk to temper the eggs. If you pour it in all at once, the eggs could cook. After you have added all the hot milk to the eggs mixture, pour it back into the sauce pan and place over medium-high heat, whisking constantly until it comes to a boil. Immediately reduce heat and continue to whisk until thickened. Once thickened, immediately take off heat and stir in butter. The pudding may thicken before it starts to boil - if this happens take off heat and stir in the butter.
    4. Strain pudding through a mesh strainer to get rid of any lumps then pour pudding into individual cups or a bowl. Press plastic wrap on surface of the pudding and refrigerate overnight.
    5. Serve with whipped cream and strawberries.
    6. To make whipped cream, add all ingredients to a stand-alone mixer fitted with a whisk attachment (can also use hand-held mixer). Beat on high-speed until stiff peaks form. If you’re afraid you’re going to over-whip, stop and check whipped cream and reduce speed.

Notes

Pudding will last 3-5 days in an airtight container. Placing a piece of plastice wrap directly on top of the pudding will help prevent the top from hardening.

  6. This looks so darn delicious! I’ve also been in a crazy chocolate mood. My hubby loves pudding. If I were a good wife, I would make this recipe for him. I don’t believe he’s ever had homemade pudding.
