Ingredients

Spiced Apple Cake

  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup sour cream
  • 2 medium apples, peeled and grated (I used a granny smith and a gala)

  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/3 cup whole milk
  • 2 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract

Instructions

Make the cake:

  1. Preheat the oven to 350 degrees F. Grease and flour a baking pan or line with parchment paper; set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg; set aside.
  3. In a stand-alone mixer fitted with a paddle attachment (hand-held mixer works too), beat butter with granulated sugar and brown sugar until light and fluffy. About 1-2 minutes at medium speed.
  4. Add eggs one at a time, then mix in vanilla extract. Batter should be creamy. Scrape down sides of the bowl as necessary.
  5. Mix in the sour cream on low speed just until combined, again scraping the sides of the bowl.
  6. With the mixer on low-speed, gradually add the bowl of dry ingredients and mix just until incorporated. Do not over-mix. The cake batter will be fluffy.
  7. Grate the apples onto a towel and gently pat them to remove excess moisture. Then fold them into the batter with a spatula.
  8. Pour the batter into the prepared pan and spread evenly. Bake for 35-40 minutes. Mine baked for 35 minutes. Check by inserting a toothpick in the center of the cake. If it comes out clean, it's done. Set aside to cool.

Make the brown sugar frosting:

  1. While the cake cools, make the frosting. In a saucepan over medium heat, melt the butter and brown sugar. Bring to a gentle boil and cook for 2 minutes, stirring constantly.
  2. Stir in milk and bring back to a boil. Remove from the heat and let cool for 5 minutes. It will still be warm after 5 minutes - that's okay! If it cools all the way, it will be too thick for the powdered sugar to be mixed in.
  3. Gradually whisk in sifted powdered sugar and vanilla until smooth and spreadable. If it's too thick, add a splash of milk.
  4. Immediately pour the frosting over the cake and spread evenly. Let the frosting set before slicing. Enjoy!
