You know what I love about salads?

They can be made with just about anything. When I think of a salad, I typically think of a vegetable salad with lettuce, a protein, and some sort of dressing. BUT there are also pasta salads, fruit salads, and DESSERT salads.
Like this here Brownie Brittle Caramel Apple Salad. I guess this could be considered a fruit salad AND a dessert salad. Frussert salad?
This recipe for Brownie Brittle Caramel Apple Salad was inspired by the traditional Snickers Apple Salad. I’m sure you have heard of it and even tried it. It was a childhood favorite of mine. We didn’t have it often, but when we did, it was definitely memorable. Who doesn’t love snickers covered in cool whip?

I took all the traditional flavors of a snickers – chocolate (brownie brittle), caramel (caramel sauce), and peanuts (well, just peanuts!), and mixed them with tart green apples and fluffy cool whip. This salad is crunchy, tart, sweet and incredibly delicious. The brownie brittle absorbs some of the moisture from the cool whip and becomes soft and literally melts in your mouth. Ugh I love it.

How gorgeous is this salad too? It’s a traditional salad in the sense that it’s inspired from a classic, but truthfully, this salad is unique and different! It’s not a dish that is typically made on a monthly basis or even a yearly basis in my house so it was fun to bring it back to life using brownie brittle.

- 8 ounce container cool whip, thawed
- 1 bag salted caramel brownie brittle – I used about 3/4 of it.
- 3/4 cup salted peanuts
- 2 granny smith apples, cut into small pieces
- Caramel sauce for drizzling
- In a large bowl mix together the apples, peanuts, and cool whip. Add brownie brittle and gently mix. Finally drizzle caramel sauce over top. Refrigerate for 30 minutes and serve immediately.
