Well it’s on to a New Year!

Did you have a nice holiday? We spent Christmas Eve and day in Chicago with my husband’s family – we ate ridiculous amounts of seafood and pasta. It was awesome. We then traveled back to Iowa to spend Christmas with my family and ate steaks, corn casserole, snicker salad, ya know, Iowa food. It was also awesome. I’m a little sad that it’s over because I miss spending time with my family but I am excited to move forward to a New Year and for Spring even though it’s 3 degrees in the Chicago area right now. I’m hopeful.

Today I am sharing a pretty recipe with you. I love the vibrant colors in this chocolate bark – remember you eat with your eyes first right?

Decadent chocolate chips, dried cranberries, pumpkin seeds, and apricot slices shown in this colorful close-up image, perfect for baking and dessert recipes.

So here are the ingredients. Chocolate, cranberries, oranges and pumpkin seeds. So simple right? And if you prefer other dried fruits and nuts/seeds go right ahead and use those instead.

Just melt the chocolate, spread it on parchment paper and decorate!

What are your plans for New Years? If you’re attending a party, bring this beautiful treat – your friends and family will appreciate something a little different other than a sour cream based dip…not that I don’t LOVE a good sour cream based dip, it’s just nice to change things up a bit.

Still can’t get over the colors!

Chocolate Bark
Prep time:
Total time:
Serves: 24 pieces
Ingredients
  • 2 cups good chocolate (I used dark)
  • 1 cup dried cranberries
  • 1 cup chopped dried oranges
  • 1/4 cup pumpkin seeds
Instructions
  1. melt chocolate in microwave or in a heat proof bowl set over a pot of simmering water until completely smooth. If you melt chocolate in microwave, start at 45 seconds then stir well. Continue heating and stirring at 15 second intervals until chocolate is melted.
  2. Pour chocolate on a piece of wax or parchment paper, spread so it is even. Top with nuts and dried fruit. Let cool for 2 hours and then cut.
Notes
After a few days, the chocolate will look foggy – it is still edible. If you are bringing to a party, make it the day of so it looks pretty.
