Healthy Birthday Cake Mini Muffins (No refined sugar)

These healthy birthday cake mini muffins are soft, fluffy and naturally sweetened with pure maple syrup. Made with all-purpose flour, Greek yogurt and melted coconut oil, the batter comes together quickly and makes about 24 mini muffins. Vanilla, almond extract and colorful sprinkles give them that classic birthday cake flavor kids love. They’re easy to make, freezer-friendly and just the right size for breakfast, lunchboxes or after-school snacking.

Why I Started Making These at Home

My kids love the birthday cake mini muffins from Costco, but they can go through a box at an impressive—and slightly alarming—speed. Every time I turned around, someone was asking where the muffins went. Spoiler alert: they ate them!

So I wanted to create a homemade version with simple ingredients that I could easily make at home to solve our mini muffin issue. Making them myself also gives me more control over the ingredients while still giving my kids the sweet, colorful muffin they love.

Testing My Homemade Version

I tested these mini muffins with all-purpose flour, pure maple syrup, Greek yogurt and melted coconut oil. The first batch baked beautifully and had exactly the soft, fluffy texture I wanted, but the flavor was a little too quiet. Birthday cake muffins should not be shy.

I replaced the milk with additional maple syrup and increased the vanilla and almond extracts. Those small adjustments added more sweetness and gave the muffins a much more noticeable birthday cake flavor without changing their tender texture.

I’ve been baking since I was a teenager and sharing recipes here for nearly two decades, and one thing I’ve learned is not to completely overhaul a recipe when the texture is already working. Sometimes a few small changes are all a recipe needs.

One Muffin Batter, Plenty of Possibilities

The birthday cake version is colorful and fun, but this is also a versatile mini muffin recipe. Leave out the almond extract and sprinkles, and you have a simple vanilla muffin base that can be adapted with different add-ins.

Mini chocolate chips would be an easy swap, or you could gently fold in dried blueberries. I love a recipe that lets me use whatever is already sitting in the pantry instead of requiring another trip to the grocery store.

A Few Tips Before You Bake

  • Melt first, then measure. Melt the coconut oil before measuring out ¼ cup, then let it cool slightly before adding it to the batter.
  • Use room-temperature ingredients. A cold egg or cold Greek yogurt can cause melted coconut oil to harden into little pieces.
  • Don’t overmix the batter. Stir only until the flour disappears. Overmixing can make mini muffins dense or rubbery.
  • Watch the baking time carefully. Mini muffins bake quickly. Start checking them at 9 minutes so they stay soft and moist.
  • Choose your sprinkles carefully. Naturally sweetened sprinkles are available if you want the muffins to be completely free of refined sugar. Different brands may bleed into the batter, so fold them in gently.
  • Let them cool before storing. Trapping warm muffins in a container creates condensation and can make the tops sticky.

Ingredients

  • 1 cup all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg, at room temperature
  • â…“ cup plus 2 tablespoons pure maple syrup
  • â…“ cup plain whole-milk Greek yogurt, at room temperature
  • ¼ cup melted coconut oil, slightly cooled (melt first, then measure)
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon almond extract
  • 3 tablespoons naturally sweetened sprinkles, plus more for topping

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 24-cup mini muffin pan with coconut oil or nonstick cooking spray. A silicone muffin pan works the best if you have one.
  2. In a medium bowl, whisk together the 1 cup all-purpose flour, 1 teaspoon baking powder, ¼ teaspoon baking soda and ¼ teaspoon salt.
  3. In a separate bowl, whisk together the egg, ⅓ cup plus 2 tablespoons maple syrup, ⅓ cup Greek yogurt, ¼ cup melted coconut oil, 2 teaspoons vanilla extract and ½ teaspoon almond extract until smooth.
  4. Add the dry ingredients to the wet ingredients. Stir gently just until combined. Fold in the 3 tablespoons sprinkles, being careful not to overmix.
  5. Divide the batter evenly among the mini muffin cups, filling each about three-fourths full. Add a few extra sprinkles to the tops.
  6. Bake for 9–11 minutes, or until the muffins spring back when lightly touched and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

  • Melt the coconut oil before measuring out ¼ cup. Allow it to cool slightly before combining it with the other ingredients.
  • Use room-temperature egg and Greek yogurt. Cold ingredients can cause the coconut oil to harden and form small lumps in the batter.
  • Mix the batter only until the flour disappears to keep the mini muffins soft and fluffy.
  • Naturally sweetened sprinkles vary by brand. Check the ingredients if you want the muffins to be completely free from refined sugar.
  • Store the muffins in an airtight container at room temperature for up to two days, refrigerate for up to five days or freeze for up to two months.
