Cottage Cheese Egg Bites are the perfect hight protein breakfast or snack. Cottage cheese and eggs are blended with a few spices then topped with broccoli and cheese and baked until perfectly cooked.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 8 large eggs
  • 1 cup cottage cheese
  • 1/4-1/2 cup shredded cheddar or Colby jack cheese
  • 1 cup finely chopped broccoli
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 350 degrees and generously spray a muffin pan with non-stick spray.
  2. Add eggs, cottage cheese, spices and cornstarch to a blender and blend until smooth - only takes about 10 seconds.
  3. Evenly pour the egg mixture into the 12 spaces.
