Turkey Panini with Brie and Cherry Preserves

Sometimes a simple sandwich is all we need.

And a pretty sandwich makes it that much more satisfying! There is something about brie cheese that makes me feel like I’m in France or something. ha! I wish. It’s just not a typical cheese that I eat weekly or monthly so this sandwich was a treat for me!

Panini with Turkey and Brie

Mariano’s, the grocery store I shop at, has this WONDERFUL cheese section and after I saw the cherry preserves and brie, I immediately knew I had to make this sandwich. It’s seriously the easiest sandwich ever. I had more trouble figuring out my panini press, but once I figured that it out, our dinner was ready in 10 minutes!

With the new year and all, Vin and I decided that maybe, just maybe, we shouldn’t pig out every night for dinner. Instead of making an entire pan of lasagna or 20 meatballs, I am making lighter meals like sandwiches, chicken with vegetables and hearty soups. Don’t worry though, this is only a few nights a week. I mean I have needs too and those needs involve things like cheese, pasta, and beef.

Turkey Panini with Brie and Cherry Preserves
Recipe Type: Panini

Ingredients
  • Berry Preserves (Cherry, Blackberry or Cranberry
  • Brie
  • Spinach
  • Deli Turkey (sliced thin)
  • Bread (I used Italian sandwich bread)
Instructions
  1. Butter one side of each slice of bread. On the other side, spread the preserves and assemble the sandwich with a few slices of brie, turkey and spinach. Place in panini press and cook until browned and crispy. If you don’t have a panini press, place in a preheated pan and cooked until golden brown. Flip and cook until golden brown on the other size.
