Crispy Oven Roasted Garlic Parmesan Potatoes

Baby gold and red potatoes are oven roasted with garlic until crispy then topped with freshly grated parmesan cheese, buttery bread crumbs and parsley.
Ingredients
- 25 small red and or gold potatoes (about 2 lbs), sliced in half
- 3 cloves of garlic, minced
- 1 teaspoon garlic salt
- 1/2 teaspoon black pepper
- Freshly grated parmesan cheese
- Fresh parsley, chopped
- Seasoned panko bread crumbs
- 2 tablespoons butter
Instructions
- Preheat oven to 350 degrees.
- Add potaotes along with olive oil, minced garlic, garlic salt and pepper to a rimmed baking sheet. Toss the potatoes with your hands until evenly covered with seasoning and oil. Place the potatoes flesh side down. See blog post for a picture if needed.
- Roast potatoes for 35-40 minutes until crisp and golden. Broil for 3-5 minutes on high for extra crisp.
- To make the bread crumbs, add 1/2 cup seasoned panko bread crumbs to a sauté pan with 2 tablespoons of butter. Place over medium heat. Stir bread crumbs until toasted, about 3-5 minutes.
- Add potatoes to a serving bowl and top with grated parmesan cheese, fresh parsley and bread crumbs. Enjoy!
Notes
Potatoes will last for 3 days refrigerated. They can be reheated in a 400 degree oven for about 10 minutes until heated through and crisp again.
