One more week of weeknight meals coming right to you! Meal planning has changed the way I feed my family – it makes it much more doable! If you can, I suggest meal planning 2-3 recipes a week to prevent “what should we eat” overwhelm. I promise it will make your life easier and you won’t be left hungry, that’s for sure!
One-Pot Garlic Tomato Chicken Orzo with Asparagus
This is a new recipe to Stuck On Sweet and I’m obsessed. Chicken thighs and asparagus are cooked in a tomato based broth with orzo. The best part, it’s all done in just one pot. It’s healthy, tasty and fast!

Reuben Sandwiches with Russian Slaw
Making sandwiches for dinner is a great way to get dinner on the table quickly. Corned beef is sandwiched between two slices of bread along with Swiss cheese, sauerkraut and a quick Russian Slaw. Simply place on a hot greased grilled or in a sauté pan until toasted. Delish!

Bruschetta Pasta with Buttery Shrimp
This pasta dish comes together in less than 30 minutes! Buttery shrimp are served with a quick, homemade bruschetta sauce over hot pasta. This recipe is light, refreshing, but so flavorful.

Greek Salmon Salad
You’re going to love this twist on a Greek Salad. Grilled Greek marinated salmon is served over a bed of lettuce with fresh tomatoes, cucumbers, feta cheese and fennel. It’s tossed in a homemade vinaigrette. Perfect for lunch and dinner!

Zucchini Bread
I make some sort of “bread” or muffin every week to munch on. I find it helps with breakfast and snacks. I love this zucchini bread so much. It tastes like dessert, but also has fresh zucchini and banana in it.
