Here’s another week of approachable recipes to plan for those busy weeknights. I completely empathize with those that find it difficult to get dinner on the table every night. I typically look at our week. If it’s incredibly busy, I plan for maybe 2-3 nights of making dinner instead of 4-5 nights. I’m hoping some of these recipe options reduces your mental load and feed your hungry stomach!

This is one of my favorite recipes. It’s light and filling but absolutely delicious. The sauce is homemade. To make it even easier, purchase a store-bought tzatziki. This would be great over rice!

Whole Roasted Chicken with Potatoes and Carrots

Making a whole chicken is not complicated at all! This recipe is very simple and can be prepared ahead of time. Leftover chicken can be used in salads and soups. I love using it for chicken salad!

I love this recipe so much! It’s absolutely delicious and comes together quickly. Serve with a dinner salad and enjoy!

Sausage and Peppers

I make this recipe all the time because it’s so simple and comforting. Italian sausage is roasted in one dish with onion, bell peppers and garlic. I will prepare it in the morning and pop it in the oven an hour before we want to eat. Enjoy as is or with bread. Delish!

Oatmeal Cinnamon Pancakes

I absolutely adore this recipe. It’s one of my favorite pancake recipes. You can make a batch of these and eat them throughout the week. They warm well in the microwave, toasted or the oven!
