I often lean on Mediterranean food for dinner options. They’re typically healthy, easy to make and I do love the flavors. In this case, chicken thighs are marinated for several hours. Then they are roasted on a sheet pan with red onion, sun dried tomatoes, and feta. It couldn’t be easier and more delicious. If you haven’t had warm feta cheese, you’re missing out! Make a side of these Roasted Greek Potatoes and dinner is served!

Chili Lime Flank Steak with Tomato Corn Salsa
Grilling season is here! I don’t care if it’s early, it’s here and I AM LOVING IT. This marinated flank steak is so easy and delicious. Simply marinate it in a chili lime marinade for several hours, grill it, slice it, and enjoy! The simple Tomato Corn Salsa can be made ahead of time – simply wait to add the avocado before serving. Enjoy as is or with warm corn tortillas.

Lemon Garlic Ravioli and Broccoli Bake
I dream about recipes like these. Who doesn’t love ravioli? I mean sometimes we just need cheesy ravioli in our lives. Ravioli is boiled until al dente with broccoli then I tossed it in a lemon garlic sauce. I topped it with buttery bread crumbs, popped it in the oven to crisp up and bam! SO GOOD.

Kale Caesar Salad with Chicken, Sun Dried Tomatoes, Avocado and Cornbread Croutons
Oh this salad recipe is spot on. First, it’s hearty enough for lunch or dinner, so that’s good. Second, you’re going to use some sun dried tomatoes which you bought for the Mediterranean bowls, so that’s good. Third, this salad has a little of everything your mouth could ever want. It’s crunchy, sweet, savory, chewy, salty, crispy. I mean come on. Make this please!

Blender Banana Muffins (healthy)
I have to admit, I am more of a sweet breakfast person than a savory. A healthy muffin, protein bar, overnight oats are more of my breakfast jam. So these Healthy Blender Banana Muffins are perfect. Simply, add all the ingredients into a blender, blend just until smooth and bake. Delicious!
