It’s time to meal plan! Meal planning has completely changed how I feed my family. It has provided so much structure in my life, reducing stress and overwhelm. When I meal plan, it takes a large to-do OFF of my list. I hope this list of recipes help inspire you to meal plan, even if it’s just a few recipes a week. Let’s get to it!
Juicy Sheet Pan Chicken Thighs
I love making a big batch of sheet pan chicken thighs because they’re so versatile. There are several ways to serve chicken thighs. Here are a few ideas to get you started. Season with Mexican seasoning, Italian seasoning, Barbecue seasoning or Greek seasoning. Serve over fluffy white rice with ingredients that go with the seasoning flavor. I often serve the chicken Mexican style over rice with guacamole, salsa, corn, black beans, cheese and red onion. Delicious!

Zuppa Toscana Soup
Soup is always a great dinner choice because it’s made in one pot. It also has lots of protein and vegetables in it. In this case, Italian sausage is cooked with carrots, onion, garlic, celery, kale and potatoes all in a delicious broth made with stock and coconut milk. Serve with a side salad or crusty bread!

Slow Cooker Cuban Beef
I love a slow cooker recipe. This Cuban Beef is so delicious and EASY. A chuck roast is slow cooked in beef broth with onion, garlic, green pepper and tomatoes. I add fresh mango and cilantro to garnish. It’s delicious over rice!

Chickpea Salad
Salads are a wonderful way to get your vegetables in. This chickpea salad is easy to make and packed full of wonderful healthy ingredients. Chickpeas, fresh tomato, bell pepper, and cucumber are tossed in a simple lemon dill vinaigrette with feta cheese. It’s the perfect light lunch! Add grilled salmon or chicken for a heartier meal.

Caprese Avocado Toast
This simple snack/breakfast choice is absolutely delicious and easy! Avocado is smashed on top of a piece of toast then topped with fresh mozzarella cheese, sliced tomato, basil and balsamic glaze. Easy, fresh, delicious!
