Creamy, cozy, and made in one pot, this broccoli cheddar orzo is an easy family-friendly dinner that comes together with simple ingredients and minimal cleanup.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups dry orzo pasta
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup whole milk
  • 4 cups small broccoli florets (bite-sized)
  • 1½ cups freshly shredded cheddar cheese (mild or sharp)
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: pinch of paprika or garlic powder

Instructions

    1. In a large deep skillet or pot over medium heat, melt 2 tablespoons butter with 1 tablespoon olive oil. Add 1 small finely diced onion and cook for 3 minutes, until softened. Stir in 2 cloves minced garlic and cook for 30 seconds, just until fragrant.
    2. Add 2 cups dry orzo pasta and stir for about 1 minute, coating it in the butter and oil. This helps prevent the orzo from becoming sticky.
    3. Pour in 4 cups chicken broth and 1 cup whole milk, then stir in ½ teaspoon salt and ¼ teaspoon black pepper (and a pinch of paprika or garlic powder if using). Bring to a gentle simmer, then reduce heat to medium-low. Cook uncovered for 7 minutes, stirring every 60–90 seconds.
    4. Stir in 4 cups bite-sized broccoli florets, nestling them into the orzo. Continue cooking for 2 more minutes, until the orzo is tender and the broccoli is bright green and just tender. The mixture should look creamy, not dry.
    5. Turn off the heat and stir in 1½ cups shredded cheddar cheese and ¼ cup grated Parmesan cheese until melted and smooth. Taste and adjust seasoning if needed. Serve immediately.

Notes

  • Avoid over-stirring to keep the texture creamy instead of gummy.
  • Add the cheese off the heat for the smoothest melt.
  • If the orzo thickens as it sits, stir in a splash of warm milk or broth before serving.
  • Store leftover orzo in an airtight container for up to 2 days in the refrigerator. Stir in a splash of broth or milk when reheating.
