Is there anyone out there that doesn’t like pickles?

I have never met anyone in my life that doesn’t like pickles. Have you? It’s kind of odd because pickles are a pretty acquired taste. They’re salty, sour, incredibly vinegary and for some reason…

so.darn.good.

I love all pickles, but my favorite are the bread and butter ones. Put those on a burger or even better, on a tuna melt? It’s heaven.

By the way…Happy 4th of July! I hope ya’ll had a great weekend. We had wonderful weather and hung by the pool all day – it was niiiice.

We also made s’mores by the bonfire. So cliche but life truly doesn’t get any better than that. It was my first s’more of the year. I know…what the heck right? I waited way too long to indulge in Summer’s most popular treat. I’m going to put this out there, but I think s’mores might be the best concoction of flavors…better than pb&j and it’s super tough to beat pb&j.

I ate four of them…two marshmallow per s’more, too. It’s the only way friends. The only way. Plus eating for two over here so technically I only only had two.

Ok back to the dip. Sorry you probably have s’mores on your mind now and I am completely 360ing in back to a totally different type of snack. Stick with me.

Dill Pickle Dip is easy to make, addicting and goes will with just about any cracker or chip…and veggie! Just like most dips, add everything to a bowl and chill then face plant.

Ingredients
  • 16 ounces (2, 8 ounce packages) cream cheese, room temperature
  • 1 (8 ounces) cup chopped dill pickles (I used baby dills, but you can use whatever)
  • 2 tablespoons dill pickle juice
  • 3 ounces dried beef, chopped
  • 1/2 plus 1/8 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 1/2 tablespoons lightly chopped fresh dill
  • 2 tablespoons finely minced sweet onions
Instructions
  1. Add cream cheese, garlic powder, pepper, and dill pickle juice to a bowl and stir until combined. Add the rest of the ingredients and mix again. Chill for an hour and serve with crackers, chips, or pretzels.
