Buffalo Chicken Dip is one of the most popular appetizer dip recipes out there. For good reason, too. Shredded chicken is mixed with cream cheese, buffalo sauce, ranch and blue cheese, then covered in cheddar cheese and baked until hot and bubbly.

It’s served with veggies, crackers or tortilla chips. This dip does not last long!

I don’t think anyone out there can resist Buffalo Chicken Dip. It’s just one of those appetizers that everyone seems to absolutely love, and one bite is simply not enough.

I brought this over to my in-laws’ house yesterday, and it was devoured within minutes. This made me very, very happy!

Buffalo Chicken Dip Ingredients

  • 16 ounces cooked and shredded chicken – You can cook the chicken yourself. I like to poach mine – this recipe for slow cooker buffalo chicken dip shows how to poach the chicken. Canned chicken or a rotisserie chicken can also be used.
  • Buffalo sauce – any kind will do!
  • Ranch – any kind will do!
  • Blue cheese – this is optional, but I like the flavor.
  • Cream cheese – make sure it’s room temperature so it can be stirred easily.
  • Shredded cheese – cheddar, Colby Jack, Monterey Jack or mozzarella are great options.
  • Green onions or cilantro – These aren’t necessary, but I do like the color it adds and also the flavor. I suggest adding at least one of them.
  • Tortilla chips, veggies or crackers – these are all great serving options. I love celery and carrots for vegetables.

Instructions

This dip is very easy to make. It requires only two steps, and that’s if you’re cooking the chicken yourself. If you’re not, then it’s simply mixing the ingredients together and baking them until hot and bubbly.

The dip can be made in advance. Simply prepare the night before, cover and refrigerate. I love make-ahead recipes like my Creamy Mustard Baked Chicken.

When you’re ready to bake, simply bake until hot and bubbly, about 25 minutes.

Ingredients

  • 16 ounces shredded chicken (this can be canned, from a rotisserie chicken or cooked and shredded yourself)
  • 1, 8 ounce block cream cheese, room temperature
  • 3/4 cup ranch
  • 1/2 cup buffalo sauce
  • 3/4 cup shredded cheddar cheese (Monterrey jack, mozzarella, or colby jack would work too)
  • 1/2 cup blue cheese crumbles
  • 1/4 cup chopped green onions
  • celery sticks, carrots and chips for serving

Instructions

    1. Preheat oven to 350 degrees. Cook chicken and shred if you’re using chicken breasts; set aside.
    2. In a large bowl, stir together cream cheese, ranch, and buffalo sauce. Add shredded cooked chicken, green onions and blue cheese and stir.
    3. Pour into 8×8 or 9×9 baking dish, top with shredded cheese and bake for 25 minutes or until bubbly.
    4. Serve with chips and chopped veggies.

Notes

Dip will last 2 days covered in the refrigerator. Simply reheat in the microwave or oven.
