If you’ve got ground beef in the fridge and zero patience for a complicated dinner, this Easy Beef Taco Skillet is about to be your new go-to.

Everything cooks in one pan: seasoned ground beef, onions, bell peppers, beans, and just enough cheese to make it comforting without being heavy.

It’s a quick, easy dinner ready in about 30 minutes. This is one of those weeknight family dinners that gets everyone fed without feeling like a whole production.

A delicious easy beef taco skillet topped with melted cheese, seasoned ground beef, fresh cilantro, and a dollop of sour cream, served with avocado slices and crispy tortilla chips on the side. Perfect for snack or party food.

Why This Easy Taco Skillet Works for Real Life

This is exactly the kind of one-pan ground beef dinner I rely on during busy weeks. I love meals that don’t require perfect timing or a sink full of dishes—and skillet dinners always deliver.

You brown the beef, stir everything together, let it simmer, and suddenly dinner just… happens. My One-Pot Ground Beef Taco Pasta gives me that same low-effort dinner feeling too.

If your family already loves cozy, scoop-and-serve meals like my unstuffed peppers one-pot recipe or comforting favorites like lasagna soup with ground beef, this taco skillet fits right into that rotation.

It’s familiar, flavorful, and doesn’t require assembling individual tacos (which, let’s be honest, sometimes feels like more work than it’s worth).

How to Customize This Beef Taco Skillet

One of the reasons I keep coming back to this recipe is how easy it is to adjust. It’s a family-friendly taco dinner that doesn’t need a separate version for every person at the table.

On nights when I want to keep things simple, I serve it straight from the skillet with a spoon and call it dinner.

Other nights, we grab tortilla chips and turn them into a scoop-and-dip situation. It actually reminds me a little of the flavors in my Loaded Ground Beef Taco Salad, just warmer and cheesier.

You can keep the seasoning mild for kids and let anyone who wants more heat add hot sauce at the table.

It’s also easy to stretch—add extra veggies, swap the beans, or use another ground meat. That flexibility is what makes this such a reliable, quick ground beef dinner for busy families.

Wrapping it up

Quick and easy dinners like this easy beef taco skillet are the backbone of my weeknight cooking. When dinner comes together fast, and cleanup is minimal, it leaves more time for what really matters—talking, laughing, and being present at the table.

This is the kind of recipe you’ll come back to again and again, especially on nights when you just need dinner to work.

If you’re building a rotation of reliable 30-minute family dinners, this one deserves a permanent spot!

Ingredients

Beef Taco Skillet

  • 2 pounds ground beef (80/20 or 85/15)
  • 1 tablespoon olive oil (if needed)
  • 1 onion, finely diced
  • 1 bell pepper, finely diced (any color)
  • 2 cloves garlic, minced
  • 1 cup beef broth (or water)
  • 1 (8-oz) can tomato sauce
  • 1 cup canned pinto beans, drained and rinsed
  • 2 tablespoons mild taco seasoning (store-bought or homemade - see blow)
  • ½ teaspoon salt (adjust to taste)
  • 1 cup shredded cheddar or Colby-Jack cheese

Optional toppings

  • Sour cream or Greek yogurt
  • Diced avocado
  • Chopped cilantro
  • Pickled red onions
  • Jalapeños
  • Salsa

Homemade Taco Seasoning

  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    1. Heat a large skillet over medium heat. Add the ground beef and cook until mostly browned, breaking it up as it cooks. Drain excess grease if needed.
    2. Stir in the diced onion and bell pepper. Cook for 3–4 minutes, until softened. Add garlic and cook for 30 seconds - adding garlic later prevents it from burning.
    3. Stir in the taco seasoning, salt, tomato sauce, pinto beans, and broth. Mix well.
    4. Simmer the mixture on low heat for 10-15 minutes or until thickened. The liquid will absorb and evaporate, creating flavor.
    5. Sprinkle cheese over the top and cover for 2-3 minutes until melted or put under your oven broiler for a few minutes.
    6. Remove from heat and let sit for a few minutes. Serve warm with optional toppings and chips to dip.

Notes

Beef Taco Skillet reheats beautifully. Store in an airtight container for up to 3 days in the refrigerator. Simply reheat in the microwave.

Enjoy over nachos, with chips, in a burrito or over rice.
