How do you make a cookie taste amazing? Add butterscotch chips! Chewy Chocolate Chip Butterscotch Cookies are simply delicious. A secret ingredient is used to make these cookies soft and chewy and totally irresistible!

And I am sharing one of my favorite cookie recipes…Chewy Chocolate Chip Butterscotch Cookies. So before I share the recipe and all that…let’s talk about how I am getting married in 7 days. Aaaahhhh!!! Right?

Life has been very good but very busy. Unfortunately, instead of making cakes, cookies, cupcakes and other fun sweets, I have been baking nothing. Yes, nothing. Not because I don’t want to, but because with summer activities, getting married, job and much more, I just honestly haven’t had the time to do it. Same goes for the cooking. I sincerely apologize for the delay in posting but I promise I will share fun wedding photos, honeymoon (Maui anyone? Napa anyone? San Fransisco anyone?) YES! Going to all three places and can’t wait. Follow me on instagram for all the foodie adventures we go on!

This is such a great recipe. Cookies turn out perfect every time. The dough is light, not too sweet and the cookies come out chewy and plump.

Don’t like chocolate chips or butterscotch chips? I hope the answer is no! Really though,  If you prefer other flavors like peanut butter chips, white chocolate chips, dark chocolate chips, or even m&ms go ahead and add them to the dough!

Chewy Butterscotch Chocolate Chip Cookies

Ingredients
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons. cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup butterscotch chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
  3. In a seperate bowl, mix flour, cornstarch, baking soda and salt. Add flour mixture to the dough. Stir in chocolate and butterscotch chips.
  4. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet. Bake for 8-13 minutes, until barely golden brown around the edges. (The tops will not brown). Let cool for a few minutes before removing to a wire rack to cool completely.

    I just made a double bath of these to take to mine and my husband’s workplaces for the holidays and we have already eaten so many I hope there’s enough for us to bring! They’re so good.

    I absolutely love this recipe and have used it many many times. I was wondering however if I could follow this recipe for the oatmeal scotties. The recipe on the back of Nestle’s calls for 1 1/4 cup flour and 3/4 brown sugar 3/4 granulated sugar and 1 tsp baking soda. Do you think I should just follow Nestle’s recipe and add the 1tsp baking soda, 2 tsp cornstarch? Thoughts? Or just follow yours and add the oatmeal??

    1. Hi Rebecca! Those sound good! I would try the Nestle recipe and add the cornstarch first and see if that works!

  3. Can I substitute more brown sugar for the granulated sugar? I was worried it would maybe make them too dense.

  5. Just made these! The dough started to get pretty thick after 1.5 cups of flour so I stopped there and they still turned out great.

  6. Can these be made without a stand mixer? I don’t own one.

    1. yes they can! You can use a hand held mixer if you have one or mix with a whisk then a spoon…just might take a little extra muscle. 🙂

    What would happen if I left out the cornstarch?

    1. Hi Elle! I have never tried this recipe without cornstarch but cornstarch makes cookies puff up and chewy so they would probably turn out more crispy with just the baking soda.

  8. Wanted to just comment and say that this is now my go-to chocolate chip cookie recipe. They *do* turn out perfect every time I make them (when I follow the instructions :)). I’ve had a cookie-connoisseur 😉 tell me they were honestly the best cookies they’ve ever had, and I’ve never *not* received a far amount of compliments when I make them. These are just that good. So after making them as my only cookies of choice for the past 2 years, I thought I better come on and attest to their goodness and say thanks!!
