FUNfetti!
How was your weekend? I spent Friday night catching up on some shows – Nashville and Smash. I am ob.sessed. I can’t get enough of the music and drama! Saturday night I went downtown Chicago to visit one of my best friends who just got engaged! We enjoyed some cocktails and danced the night away – the perfect way to celebrate! Congratulations again Ashley and Justin!
Now let’s chat about these here cookies. Simple, fun and perfect for everyone, especially the kiddos. You will most likely have all the ingredients on hand – cake mix, vegetable oil, eggs, and pudding. I tend to hoard pudding and cake mix because when it goes on sale ($0.99 a box!!!!!), I buy like 20 boxes. Cake mix and pudding mix can be used in tons of recipes – cakes, cupcakes, cookies, muffins, brownies, fruit fluff (one of my favorites!) and not just as the main dry ingredient. You can make cupcakes from scratch and add pudding powder to give them more body and flavor. I will experiment and share with you, don’t worry!
The dough is very oily so don’t be alarmed, it’s well…because of the oil of course. 😉 Flatten them about a bit with the palm of your hand and bake for about 8 minutes, check them, and put them back in a minute or so more if they need a little more time. These bake fast and you don’t want to burn them so just keep a watchful eye. Do you see why I am calling them YELLOW Cake Funfetti Cookies…the batter is this funky yellow color, kind of fun right?
You can use any cake mix for these cookies – lemon, chocolate, funfetti, strawberry…whatever you’re in the mood for. You can also go to the extra step and frost them – makes them pretty sweet but super fun and kids love them.
Enjoy these simple, FUN and chewy cookies!
- 1 box yellow cake mix
- 3 tablespoons vanilla pudding powder
- 2 eggs
- 1/2 cup vegetable oil
- sprinkles
- Pre-heat oven to 350 degrees
- In a bowl, mix together cake mix and pudding; set aside
- In another bowl, mix together the eggs and vegetable oil. Then add cake/pudding mix and stir with a large spoon until the dough comes together. Next add sprinkles and mix one last time.
- Bake for 8-10 minutes. Make sure to check for doneness at 8 minutes, be careful to not overbake.
