Easy Chicken Chili (slow cooker recipe)

This easy chicken chili recipe is hearty, flavorful and family-friendly. That’s a great combination to have! It’s made right in your slow cooker and it takes just a few minutes to prep. Simply add all of the ingredients, walk away and dinner will be done when you’re ready to eat!

So my mom made this recipe and it was so easy and delicious that I had to make it at home. I made it over and over again and that’s when I realized this chili recipe deserves a spot on the blog. Not only does it taste amazing, but it’s made in the slow cooker which just makes dinner efficient and easy. It’s a no brainer.

What I learned from making this easy chicken chili

I made the recipe twice. The first time I used chicken thighs which I cooked with all the ingredients and then shredded. The second time I decided to use a rotisserie chicken which I actually preferred. I cut all the meat off and saved it for the end of cooking. I then put the carcass (I know…kind of weird) in the slow cooker and let it cook with all the ingredients. It flavored the chili so much more. We absolutely loved it. I added the chicken at the very end of cooking. I highly recommend doing it this way for maximum flavor.

How to Serve

Chili is so versatile when it comes to toppings and what to serve it with. The options are truly endless. We enjoyed it with cheese, cilantro and chips. Here are a few other options to switch things up!

  • Sliced avocado or guacamole. I really like my guacamole recipe. It’s fresh and simple. It would complement the chili really well. It would also be a great side with chips in addition to the bowl of chili.
  • Chips – A classic tortilla or a corn chip like a Frito would be really yummy. Trader Joe’s has a spicy corn chip that would be bomb. Just saying.
  • Sour cream or Greek yogurt – either would add a nice creamy element to the chili.
  • Red onion, green onion, chives, cilantro, or jalapeños – Any of these options would add a fresh pungent (in a good way) bite to the chili. The chili is creamy due to the cream cheese, so a fresh element would cut through it nicely.

This easy slow cooker chicken chili will become your new favorite family meal. Toss all the ingredinets into a slow cooker and let it do it's thing. It's simple, tasty and perfect for week night dinners and game day get togethers.

Ingredients

  • 1 rotisserie chicken, skin removed and chicken cubed, keep the remains though!
  • 1 1/2 cup frozen corn
  • 1, 14.5 ounce black beans, drained and rinsed
  • 1 poblano, seeds and ribs removed, diced finely
  • 2 garlic cloves, diced finely
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2, 14.5 cans petite diced tomatoes (could use fire roasted for extra heat)
  • 1, 14.5 ounce can tomato sauce
  • 1-2 cups chicken stock (1 for thicker chili, 2 for more soupy)
  • 1 teaspoon salt
  • 2 teaspoons dried oregano
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 4 ounces full fat cream cheese

Toppings:

  • Shredded cheese
  • cilantro
  • avocado
  • tortilla chips

Instructions

  1. Place all the ingredients in your slow cooker, including the remains of the rotisserie chicken (The carcass - it helps flavor the chili). Do not add the diced chicken yet, though. Cook on low for 6-8 hours (I did 6 hours) or on high for 3-5 hours.
  2. Once the chili has slow cooked, add diced or shredded rotisserie chicken and cream cheese. Stir until cream cheese fully melts into the chili.
  3. Serve with topping of your choice!

Notes

This can be frozen up to 3 months and is great as leftovers!

Chili will last 3 days refrigerated.
